Ingredientes

  • 4 x Knuckles of roe deer, (ask your game dealer)
  • 3 x Cloves garlic, crushed
  • 1 sprg fresh rosemary
  • 2 x Glasses good dry white wine Extra virgin extra virgin olive oil Salt and pepper

Direcciones

  1. Seal and colour the knuckles in extra virgin olive oil. Add in the garlic and rosemary and cook for two more min.
  2. Add in the salt, pepper and wine and cover. Cook very gently for one hour or possibly till tender - if they are too dry, then add in some stock.
