Ingredientes

  • 1 lb Sauerkraut
  • 2 Tbsp. Bacon drippings
  • 2 Tbsp. Flour, all-purpose
  • 1 sm Onions, chopped
  • 1 Tbsp. Paprika
  • 1/2 lb Sausage, smoked, sliced thin
  • 3 Tbsp. Lowfat sour cream Salt, to taste

Direcciones

  1. Squeeze the sauerkraut well and reserve the juice. Cook the sauerkraut in 2 quarts water until it softens.
  2. Meantime, heat bacon drippings in a frying pan, add in flour and stir and fry till the mix is light beige. Then add in onion and cook for another 5 mintes.
  3. Take of heat, stir in paprika, immediately add in 1 c. cool water and whip till smooth. Pour reserved sauerkraut juice into soup pot; add in flour and onion mix, the sliced sausage and cooked sauerkraut. Cook for 10 to 15 min.
  4. In a soup tureen, mix lowfat sour cream and c. of warm sauerkrat broth. Add in salt if needed. Adjust taste to make sure it is quite sour and pour into the tureen. Mix with the lowfat sour cream and serve.
  5. Notes: Generally served in the wee hrs of the morning to revive the guests in a private home or possibly restaurant after an all-night party. Although it can be prepated in several ways, it must always be slightly fatty and have a very sharp taste.
