Receta Kosher Kinda-Caribbean Rice & Beans – easy, creamy & delish (and pareve, too)
Ingredientes
- 2 tablespoons olive oil
- 1 onion, minced
- 4 cloves garlic, grated or pressed
- 1” ginger, grated
- (optional) 1 jalapeno pepper, seeded and minced
- 2 cups basmati rice, uncooked
- 1 (15 ounce) can red beans, drained and rinsed (I used fresh)
- 1 1⁄2 cups coconut milk MIXED WITH enough chicken broth (pareve or real) to make 4 cups liquid
- 1 tsp dried thyme
