%20I%20know%20I'm%20romanticizing%20but%20who%20needs%20to%20go%20away%20when%20London's%20shimmering%20on%20days%20like%20today.%3C/p%3E%3Cp%3EOf%20course%20nothing%20quite%20says%20'summer'%20like%20an%20ice%20cream%20cone,%20with%20the%20ice%20cream%20dribbling%20down%20your%20chin,%20on%20your%20clothes,%20or%20in%20my%20case,%20somehow%20ending%20up%20in%20my%20hair.%20Last%20weekend%20I%20dusted%20off%20two%20relics%20from%20the%20Johansen%20kitchen%20cupboard%20-%20a%20Gaggia%20ice%20cream%20machine%20and%20a%20Krumkake%20iron%20to%20make%20cornets,%20or%20as%20my%20American%20cousins%20call%20them,%20cones.%20Krumkake%20is%20a%20Norwegian%20version%20of%20the%20cone,%20translating%20as%20'crumbly%20cake',%20an%20apt%20description%20of%20this%20crispy%20cone.%20Both%20machines%20were%20pilfered%20from%20Ma%20&%20Pa%20Johansen,%20and%20after%20nearly%20three%20decades%20of%20use%20still%20work%20-%20though%20admittedly%20just%20as%20I'm%20about%20to%20plug%20in%20these%20prized%20posessions%20there's%20a%20moment%20when%20I%20worry%20whether%20I%20might%20be%20electrocuted%20or%20the%20machine%20will%20simply%20have%20ceased%20to%20function.%20Thankfully,%20both%20are%20still%20going%20strong.%3C/p%3E%3Cp%3EAs%20mentioned%20on%20a%20recent%20post%20on%20the%20Beyond%20Baked%20Beans%20facebook%20page,%20I'm%20an%20ice%20cream%20snob.%20Nothing%20quite%20raises%20the%20Johansen%20ire%20like%20commercial%20ice%20cream%20or%20mediocre%20'homemade'%20ice%20cream%20in%20restaurants%20or%20ice%20cream%20parlours.%20The%20best%20stuff%20in%20London%20is%20certainly%20dark%20chocolate%20ice%20cream%20from%20Chocstar%20and%20pretty%20much%20anything%20from%20Odonno.%20Even%20supermarket%20offerings%20that%20are%20purported%20to%20be%20good,%20such%20as%20Haagen%20Dazs%20and%20Ben%20&%20Jerry's,%20are%20cloying,%20chewy%20and%20over-priced%20for%20what%20is%20effectively%20just%20a%20humble%20mix%20of%20milk/cream,%20eggs%20and%20sugar.%20So%20if%20you%20have%20the%20time%20and%20inclination,%20I%20really%20encourage%20you%20to%20try%20making%20your%20own%20ices%20this%20summer.%20For%20a%20basic%20fruit%20ice%20cream%20recipe,%20go%20to%20the%20abovementioned%20facebook%20page%20and%20play%20around%20with%20flavours%20and%20ingredients%20-%20I'm%20lucky%20enough%20to%20have%20a%20gadget%20for%20ice%20cream%20churning,%20but%20you%20can%20make%20perfectly%20good%20ice%20cream%20without%20one.%3C/p%3E%3Cp%3EAnd%20as%20for%20the%20cones%20-%20try%20baking%20the%20mixture%20on%20a%20sheet%20in%20the%20oven%20as%20you%20would%20with%20brandy%20snaps.%20The%20key%20to%20getting%20the%20'cone'%20shape%20is%20to%20work%20quickly%20once%20the%20cones%20are%20baked%20-%20recruit%20a%20few%20mates%20with%20asbestos%20fingers%20to%20help%20you%20with%20this%20task,%20and%20roll%20them%20up%20before%20cooling%20in%20a%20cup.%20You%20can%20of%20course%20vary%20the%20flavours,%20adding%20cinnamon%20or%20cardamom%20for%20a%20change,%20or%20replacing%20lemon%20zest%20with%20orange%20zest,%20or%20some%20vanilla%20extract/seeds.%20A%20sprinkling%20of%20cocoa%20or%20chocolate%20wouldn't%20go%20amiss%20either,%20but%20the%20classic%20lemon%20zest%20and%20nutmeg%20combo%20is%20a%20match%20made%20in%20heaven,%20so%20I%20confess%20to%20never%20deviating%20from%20this%20'Norway's%20delight'%20recipe...%3C/p%3E%3Cp%3EKrumkake%20Ingredients:%3C/p%3E%3Cp%3EMethod:%3C/p%3E%3Cp%3EPlug%20in%20your%20krumkake%20iron,%20or%20preheat%20the%20oven%20to%20190%20C%20and%20prepare%20a%20baking%20sheet%20with%20greaseproof%20paper.%20In%20a%20medium%20bowl,%20whisk%20the%20eggs%20and%20sugar%20until%20pale%20and%20fluffy.%20Add%20the%20flour,%20butter,%20water%20in%20increments.%20Grate%20in%20zest%20and%20nutmeg.%20Beat%20together%20til%20there%20are%20no%20lumps%20-%20it%20should%20be%20quite%20a%20thick%20batter,%20the%20consistency%20of%20gloopy%20toothpaste.%3C/p%3E%3Cp%3EButter%20the%20krumkake%20iron%20and%20place%20a%20dollop%20of%20the%20mixture%20on%20the%20bottom%20of%20the%20iron,%20close%20the%20lid%20and%20cook%20for%203-4%20minutes%20depending%20on%20how%20hot%20the%20iron%20gets.%20You%20want%20a%20pale%20brown%20colour,%20not%20too%20brown%20or%20they'll%20scorch.%20If%20baking%20in%20the%20oven,%20place%20on%20the%20upper%20shelf%20and%20leave%20for%205-7%20minutes.%3C/p%3E%3Cp%3ERemove%20the%20krumkake%20cornet%20when%20it's%20ready%20and%20-%20this%20is%20the%20tricky%20bit%20-%20shape%20into%20a%20cornet%20while%20still%20warm.%20You'll%20quickly%20develop%20asbestos%20fingers%20from%20doing%20this%20if%20you're%20not%20already%20in%20possession%20of%20a%20heatproof%20pair%20of%20hands.%20I%20find%20quickly%20shaping,%20then%20placing%20the%20cornets%20in%20a%20glass%20(my%20mother%20suggested%20a%20champagne%20flute!)%20or%20a%20cup%20so%20they%20hold%20their%20shape%20is%20the%20best%20method.%3C/p%3E%3Cp%3EIf%20making%20cornets%20proves%20exasperating%20-%20after%20all%20toasted%20fingers%20are%20no%20fun%20-%20simply%20make%20baskets%20instead%20by%20shaping%20the%20krumkake%20around%20the%20bottom%20of%20a%20glass,%20ramekin%20or%20rolling%20pin%20and%20folding%20up%20the%20edges%20like%20a%20brandy%20snap.%20Makes%20for%20a%20pretty%20basket,%20though%20more%20vulnerable%20to%20breakage%20when%20storing.%20The%20cornets%20are%20definitely%20easier%20to%20stack%20in%20a%20sealed%20cookie%20jar,%20and%20will%20keep%20for%20a%20week%20or%20two.%20These%20are%20ideal%20for%20serving%20friends%20at%20a%20dinner%20party,%20as%20indeed%20is%20the%20homemade%20ice%20cream.%20Simple%20really.%3C/p%3E){kind=link}
