%20was%20too%20tempting%20to%20pass%20up.%20My%20friend%20had%20been%20wanting%20to%20marmalade-ize%20her%20kumquats%20and%20give%20the%20preserves%20away%20as%20gifts,%20and%20I%20was%20eager%20to%20help.%3C/p%3E%3Cp%3EBesides,%20the%20bright%20orange%20kumquats%20dotting%20the%20little%20tree%20were%20so%20plentiful%20that%20simply%20snacking%20on%20a%20few%20of%20them,%20fresh%20and%20raw,%20wasn%E2%80%99t%20going%20to%20put%20much%20of%20a%20dent%20in%20things,%20despite%20our%20best%20efforts.%3C/p%3E%3Cp%3EAs%20you%20bite%20into%20a%20kumquat,%20the%20fresh%20crunch%20of%20the%20sugary%20peel%20gives%20way%20to%20a%20small%20amount%20of%20sharply%20sour%20citrus%20juice.%20A%20seed%20or%20two%20surfaces%20from%20the%20bitter%20pith.%20The%20citrus%20oils%20tingle%20on%20your%20lips.%3C/p%3E%3Cp%3EYou%20could%20nibble%20away%20at%20only%20the%20peel%20and%20leave%20the%20delicate%20star-shaped%20center%20intact,%20but%20I%20prefer%20the%20contrast%20of%20bitter%20and%20sweet%20that%20you%20get%20from%20eating%20everything%20but%20the%20seeds;%20it%E2%80%99s%20what%20makes%20the%20marmalade%20so%20irresistible%20as%20well.%3C/p%3E%3Cp%3EThe%20night%20before%20our%20Marmalade%20Day,%20I%20made%20a%20list%20of%20flavors%20that%20might%20taste%20nice%20with%20kumquats%20(limited%20by%20my%20lazy%20reluctance%20to%20stop%20at%20a%20store,%20and%20thus%20by%20what%20I%20had%20in%20the%20house).%20I%20wanted%20to%20doctor%20up%20half%20of%20the%20marmalade%20with%20a%20little%20twist%20to%20it.%20The%20list%20included:%3C/p%3E%3Cp%3Erose%20water%3C/p%3E%3Cp%3Ekaffir%20lime%20leaves%3C/p%3E%3Cp%3Ecinnamon%20sticks%3C/p%3E%3Cp%3Enutmeg%3C/p%3E%3Cp%3Evanilla%3C/p%3E%3Cp%3Edried%20hibiscus%20flowers%3C/p%3E%3Cp%3Efresh%20mint%20leaves%3C/p%3E%3Cp%3Ecardamom%3C/p%3E%3Cp%3EOf%20course%20by%20now%20you%20know%20which%20of%20these%20eventually%20won%20us%20over.%20We%20made%20one%20batch%20of%20classic%20kumquat%20marmalade,%20and%20one%20with%20cardamom%20and%20brown%20sugar.%20(Both%20recipes%20are%20below.)%3C/p%3E%3Cp%3EI%20still%20think%20many%20of%20the%20other%20options%20are%20good%20ideas,%20too;%20let%20me%20know%20how%20it%20turns%20out%20if%20you%20try%20any!%3C/p%3E%3Cp%3EThe%20cardamom%20brown%20sugar%20marmalade%20has%20a%20lovely%20balance%20of%20tart,%20bitter,%20and%20sweet%20from%20the%20modest%20amount%20of%20citrus%20juice%20in%20the%20kumquats.%20The%20subtle%20scent%20of%20cardamom%20adds%20a%20little%20warmth%20and%20intensity%20to%20the%20flavor.%3C/p%3E%3Cp%3EThe%20cardamom%20marmalade%20didn%E2%80%99t%20gel%20quite%20as%20nicely%20as%20the%20plain%20kumquat%20marmalade,%20but%20I%E2%80%99m%20still%20pretty%20happy%20with%20the%20texture.%20It%20might%20be%20the%20case%20that%20the%20ground%20cardamom%20kept%20it%20from%20gelling%20as%20well,%20but%20I%E2%80%99m%20more%20inclined%20to%20believe%20that%20it%E2%80%99s%20because%20we%20canned%20that%20one%20first,%20and%20left%20the%20classic%20marmalade%20simmering%20for%20about%2020%20minutes%20longer.%3C/p%3E%3Cp%3E(Marmalade%20can%20take%20up%20to%20two%20weeks%20to%20fully%20gel;%20both%20types%20of%20jam%20later%20gelled%20more%20nicely%20than%20it%20seems%20in%20the%20photos,%20all%20of%20which%20were%20taken%20on%20the%20day%20of%20canning.)%3C/p%3E%3Cp%3EIf%20you%20like,%20you%20could%20skip%20the%20ground%20cardamom%20and%20infuse%20the%20jam%20using%20only%20the%20whole%20green%20cardamom%20pods.%20I%E2%80%99d%20still%20add%20the%20ground%20cardamom%20next%20time;%20I%E2%80%99d%20just%20give%20it%20a%20little%20more%20time%20on%20the%20stove%20before%20canning.%3C/p%3E%3Cp%3EThe%20marmalade%20is%20excellent%20on%20crackers,%20English%20muffins,%20Greek%20yogurt,%20you%20name%20it%E2%80%A6%20I%20also%20had%20an%20epiphany%20when%20I%20was%20out%20to%20brunch%20this%20past%20weekend:%20I%20bet%20it%20would%20be%20amazing%20smeared%20onto%20crepes.%3C/p%3E%3Cp%3E*%20Why%20isn%E2%80%99t%20there%20a%20word%20in%20English%20for%20%E2%80%9Cbittersour%E2%80%9D%20the%20way%20there%20is%20for%20%E2%80%9Cbittersweet%E2%80%9D?%3C/p%3E%3Cp%3Ep.s.%20Another%20lovely%20use%20for%20kumquats%20was%20just%20posted%20last%20week%20on%20the%20blog%20Keep%20Calm%20and%20Eat%20On.%3C/p%3E%3Cp%3ERECIPES:%3C/p%3E%3Cp%3EKumquat%20Cardamom%20Marmalade%3C/p%3E%3Cp%3EMakes%20enough%20to%20fill%203-4%20half-pint%20jars%20(1%C2%BD-2%20pints).%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EHow%20to%20make%20it:%3C/p%3E%3Cp%3E1.%20Rinse%20and%20thinly%20slice%20the%20kumquats,%20removing%20seeds%20from%20the%20slices%20as%20you%20go.%20In%20a%20large%20bowl%20or%20pot,%20measure%20out%20a%202:1%20water-to-fruit%20ratio,%20add%20the%20ground%20cardamom%20and%20green%20cardamom%20pods,%20and%20let%20soak%20for%202%20hours.%3C/p%3E%3Cp%3E2.%20Transfer%20to%20the%20stove%20and%20bring%20to%20a%20boil%20over%20high%20heat,%20then%20reduce%20heat%20and%20simmer,%20uncovered,%20for%201%20hour.%20Then%20fish%20out%20and%20remove%20each%20of%20the%20green%20cardamom%20pods.%3C/p%
