Ingredientes

  • 500 gm rump steak, in the piece 5cm thick
  • 1/2 c. water
  • 1 Tbsp. lemon juice
  • 1/4 c. Dijon mustard
  • 25 gm butter
  • 2 tsp dry tarragon or possibly 1 Tbsp. freshly minced tarragon Salt and pepper

Direcciones

  1. Heat a heavy-based frying pan till very warm.
  2. Cook steak on one side for 4 min.
  3. Turn and cook other side for a further 4 min.
  4. Remove from pan and rest meat while preparing sauce.
  5. Add in water to frying pan. Add in lemon juice and mustard and bring to the boil.
  6. Slowly stir in butter till melted.
  7. Add in tarragon, salt and pepper. Stir to combine.
  8. Slice steak thinly and serve with sauce poured over.
