%20broth.%3C/p%3E%3Cp%3ERolling%20Tuscan%20hills%20as%20far%20as%20the%20eye%20can%20see%20at%20Fattoria%20di%20Montalbano%3C/p%3E%3Cp%3EThe%20view%20at%20breakfast%20-%20an%20idyllic%20spot%20to%20start%20the%20day%3C/p%3E%3Cp%3EWe%20began%20our%20recent%20two%20week%20Italian%20holiday%20in%20an%20agriturismo%20just%20south%20of%20Florence%20%E2%80%93%20Fattoria%20di%20Montalbano.%20We%20had%20rented%20Il%20Trebbiali,%20a%20six%20bedroom%20villa%20on%20the%20grounds%20of%20the%20Nustrini%20farm.%20Charming,%20comfortable%20and%20with%20a%20big%20homey%20Tuscan%20kitchen,%20I%20had%20visions%20of%20cooking%20up%20a%20storm%20of%20Italian%20delicacies.%20As%20it%20happened,%20dinner%20was%20more%20often%20than%20not%20a%20gorgeous%20plate%20of%20salume%20and%20cheese,%20accompanied%20by%20delicious%20Chianti.%3C/p%3E%3Cp%3EEnjoying%20a%20sundowner%20at%20Il%20Trebbiali%3C/p%3E%3Cp%3EOn%20our%20last%20night%20at%20Il%20Trebbiali,%20we%20planned%20to%20use%20the%20last%20of%20what%20was%20in%20the%20fridge.%20And%20so%20it%20was%20that%20I%20experienced%20firsthand%20la%20cucina%20povera.%20Upon%20inspection,%20there%20wasn%E2%80%99t%20much%20left,%20but%20I%20knew%20what%20was%20there%20would%20be%20great.%20I%E2%80%99d%20assemble%20a%20plate%20of%20the%20remaining%20finocchiona,%20prosciutto%20and%20pecorino;%20the%20fresh%20sausages%20we%20bought%20at%20the%20local%20marcelleria%20would%20be%20grilled,%20and%20we%E2%80%99d%20finish%20with%20perhaps%20my%20favourite%20of%20the%20cucina%20povera%20repertoire:%20panzanella%20%E2%80%93%20a%20tomato,%20bread%20and%20cucumber%20salad%20that%20humbly%20combines%20a%20handful%20of%20ingredients%20into%20a%20splendid%20dish.%3C/p%3E%3Cp%3EPanzanella%20Salad%3C/p%3E%3Cp%3Eserves%20four%20comfortably,%20and%20two%20greedily%3C/p%3E%3Cp%3E1.%20Slice%20the%20bread%20into%20thick%20pieces.%20Rub%20the%20cut%20clove%20over%20one%20side%20and%20generously%20brush%20both%20sides%20of%20the%20bread%20with%20olive%20oil.%20Grill%20the%20bread%20over%20a%20charcoal%20grill,%20turning%20the%20pieces%20until%20both%20sides%20are%20browned%20and%20toasted.%20Set%20bread%20aside%20to%20cool.%3C/p%3E%3Cp%3E2.%20Roughly%20chop%20the%20tomatoes%20and%20put%20them%20in%20a%20large%20serving%20bowl.%20Some%20recipes%20for%20panzanella%20call%20for%20the%20tomatoes%20to%20be%20peeled%20and%20seeded;%20I%20say%20-%20this%20is%20a%20rustic%20salad.%20La%20mamma%20would%20have%20dispensed%20with%20such%20niceties%20when%20trying%20to%20feed%20a%20hungry%20family.%3C/p%3E%3Cp%3E3.%20Trim%20the%20cucumber%20and%20chop%20into%20bite%20sized%20pieces.%20Add%20to%20the%20tomatoes.%20Add%20the%20basil.%3C/p%3E%3Cp%3E4.%20Cut%20the%20bread%20into%20large%20crouton-style%20cubes.%20Add%20to%20the%20tomatoes%20and%20toss%20all%20three%20ingredients%20until%20well%20combined.%3C/p%3E%3Cp%3E5.%20Add%20a%20generous%20amount%20of%20olive%20oil%20(at%20least%202%20tbsp)%20and%20salt%20and%20pepper%20to%20taste.%20Toss,%20taste%20and%20adjust%20seasonings%20if%20necessary.%3C/p%3E%3Cp%3EThe%20salad%20can%20be%20made%20ahead,%20enough%20so%20that%20the%20juices%20develop%20and%20the%20bread%20absorbs%20some%20of%20the%20tomato%20flavour%20but%20not%20so%20much%20that%20you%20have%20soggy%20bread.%20%20If%20you%20are%20making%20ahead,%20add%20the%20basil%20just%20before%20serving%20and%20give%20a%20final%20toss%20to%20combine%20ingredients.%3C/p%3E%3Cp%3EServe%20at%20the%20end%20of%20a%20Tuscan%20meal,%20preferably%20during%20sunset,%20and%20finish%20with%20a%20delightful%20bottle%20of%20Chianti.%3C/p%3E%3Cp%3EBuon%20appetito!%3C/p%3E){kind=link}
