%3C/p%3E%3Cp%3EA%20moment%20of%20relative%20quiet%20in%20Tapas%2024.%3C/p%3E%3Cp%3ETapas%2024%E2%80%94it%20probably%20helps%20to%20add%20some%20context%E2%80%94had%20long%20been%20on%20my%20list%20of%20must-visit%20places%20in%20Barcelona%20(it%E2%80%99s%20strongly%20recommended%20by%20the%20crew%20at%20Barcelona%20Wine%20Bar%20via%20its%20guide%20to%20the%20best%20in%20Spain),%20but%20it%20was%20only%20on%20our%20most%20recent%20trip%20that%20we%20were%20able%20to%20make%20that%20a%20reality.%20The%20chef%20Carles%20Abellan%20was%20an%20acolyte%20of%20Ferran%20Adri%C3%A0%20before%20setting%20out%20on%20creating%20his%20own%20little%20empire%20of%20restaurants,%20and%20Tapas%2024%20became%20the%20more%20casual%20offshoot%20of%20his%20first%20restaurant%20Comer%C3%A7%2024.%20Michael%20rightly%20likens%20the%20atmosphere%20of%20the%20place%20to%20that%20of%20a%20bustling%20train%20station,%20only%20I%20can%20assure%20you%20that%20the%20food%20is%20far%20better%20even%20than%20the%20likes%20you%20would%20find%20at%20Grand%20Central%20Terminal.%20There%E2%80%99s%20a%20set%20menu%20of%20classics%20plus%20daily%20specials,%20and%20during%20our%20meal%20we%20were%20both%20able%20to%20find%20a%20favorite%20off%20of%20each%20menu.%20While%20Michael%20preferred%20the%20pork%20belly%20with%20cabbage,%20shallots,%20and%20butter%20lettuce,%20I%20was%20partial%20to%20the%20bikini%20Comer%C3%A7%2024%20for%20reasons%20that%20will%20be%20wholly%20unsurprising.%3C/p%3E%3Cp%3EBikini%20Comer%C3%A7%2024.%3C/p%3E%3Cp%3ETo%20be%20completely%20honest,%20I%20was%20a%20little%20mad%20at%20this%20sandwich%20because%20it%E2%80%99s%20simply%20black%20truffle,%20mozzarella%20di%20bufula,%20and%20jam%C3%B3n%20ib%C3%A9rico%20pressed%20between%20two%20pieces%20of%20white%20toast%20and%20cut%20into%20triangles,%20but%20all%20was%20quickly%20forgiven%20when%20I%20bit%20into%20the%20first%20one.%20My%20eyes%20bugged%20out%20(so%20much%20that%20Michael%20kept%20taking%20pictures%20of%20me%20diving%20into%20the%20rest%20of%20the%20plate)%20and%20I%20had%20to%20pace%20myself%20from%20wolfing%20down%20the%20whole%20plate%20before%20he%20could%20even%20get%20a%20taste.%20Even%20in%20the%20haze%20of%20a%20sandwich-induced%20stupor%20I%20knew%20that%20I%E2%80%99d%20want%20to%20revisit%20this%20again%20and%20again,%20so%20once%20we%20got%20back%20from%20our%20trip%20I%20started%20my%20experiments%20shortly%20thereafter.%3C/p%3E%3Cp%3EOpen-Face%20%E2%80%9CBikini%20Comer%C3%A7%2024%E2%80%9D%20Crostini%3C/p%3E%3Cp%3EAs%20of%20this%20writing,%20the%20combination%20that%20works%20for%20me%20is%20a%20lightly%20toasted%20round%20of%20baguette%20rubbed%20with%20a%20fresh%20garlic%20clove%20and%20then%20topped%20with%20some%20ham%20(or%20lomo),%20burrata%20or%20mozzarella%20di%20bufula,%20and%20finally%20a%20good%20sprinkle%20of%20white%20truffle%20salt.%20Even%20with%20the%20cheese%20being%20at%20times%20a%20bit%20wobbly%20it%E2%80%99s%20an%20elegant%20little%20toast%20and%20it%E2%80%99s%20so%20easy%20to%20pull%20together%20that%20I%20feel%20slightly%20silly%20for%20writing%20it%20out%20as%20a%20recipe%20at%20all,%20but%20I%E2%80%99ve%20waited%20too%20long%20as%20it%20is%20to%20not%20share%20something%20with%20you.%20In%20my%20various%20iterations%20I%E2%80%99ve%20even%20tried%20sobrasada%20instead%20of%20the%20ham%20or%20lomo%20and%20was%20very%20satisfied%20with%20the%20results%20so%20there%20is%20definitely%20some%20room%20to%20play%20around%20with%20this%20assembly.%20If%20jamon%20ib%C3%A9rico%20or%20even%20jamon%20serrano%20are%20not%20readily%20available%20prosciutto%20would%20work%20nicely,%20and%20if%20you%20happen%20to%20see%20some%20wild%20boar%20salami%20or%20other%20interesting,%20gamey%20meats%20at%20your%20local%20deli%20they%20could%20work%20wonderfully%20here%20too.%3C/p%3E%3Cp%3EOpen-Face%20%E2%80%9CBikini%20Comer%C3%A7%2024%E2%80%9D%20Crostini%3C/p%3E%3Cp%3EMakes%2012-15%20toasts%20at%20minimum%3C/p%3E%3Cp%3EPlace%20bread%20on%20broiler%20rack%20and%20toast%20until%20golden%20brown;%20remove%20and%20rub%20well%20with%20fresh%20garlic%20cloves.%20If%20desired,%20lightly%20drizzle%20toasts%20with%20good%20olive%20oil.%3C/p%3E%3Cp%3EPlace%20a%20small%20slice%20of%20the%20ham%20or%20loin%20or%20about%20a%20teaspoon%20and%20a%20half%20of%20sobrasada%20onto%20each%20toast,%20and%20then%20gently%20add%20cheese;%20arrange%20on%20a%20platter%20for%20serving%20and%20then%20sprinkle%20well%20with%20truffle%20salt%20and%20serve%20immediately.%3C/p%3E%3Cp%3ELike%20Loading...%3C/p%3E%3Cp%3ERelated%3C/p%3E){kind=link}
