,%20and%20I%20pickled%2020%20pounds%20of%20cucumbers.%20I%20now%20have%20ten%20quart%20jars%20and%20sixteen%20pint%20jars%20full%20of%20pickles%20-%20half%20kosher%20dills,%20and%20half%20bread-and-butter.%20They're%20cheerfully%20pickling%20away%20on%20my%20kitchen%20table%20at%20the%20moment.%3C/p%3E%3Cp%3EYesterday%20was%20interesting;%20Keith%20and%20I%20took%20a%20break%20from%20canning%20to%20help%20a%20friend%20of%20a%20friend%20cull%20her%20chicken%20flock.%20She%20had%20several%20old%20biddies%20who%20weren't%20laying%20eggs%20anymore,%20and%20there%20were%20more%20chickens%20than%20her%20coop%20could%20handle,%20so%20some%20of%20them%20had%20to%20go.%20This%20was%20the%20first%20time%20any%20of%20us%20had%20seen%20inside%20an%20older%20hen,%20and%20let%20me%20tell%20you,%20it's%20NOTHING%20like%20the%20inside%20of%20a%20little%20one!%20It%20was%20an%20egg%20machine%20in%20there!%20Dozens%20and%20dozens%20of%20yolks%20in%20varying%20sizes,%20a%20big%20veiny%20egg%20sac,%20just%20some%20very%20complex%20works.%3C/p%3E%3Cp%3EI%20always%20kind%20of%20thought%20the%20egg%20was%20a%20byproduct%20and%20they%20just%20made%20one%20at%20a%20time,%20but%20I%20have%20a%20whole%20new%20respect%20for%20my%20laying%20hens%20now.%20The%20female%20chicken%20is%20built%20to%20make%20eggs,%20and%20lots%20of%20them.%20I'll%20always%20remember%20seeing%20all%20those%20yolks,%20some%20full%20sized%20and%20some%20smaller%20than%20a%20dime.%3C/p%3E%3Cp%3EToday%20I'm%20giving%20the%20house%20a%20much-needed%20scrubbing%20and%20then%20making%20some%20pizza%20dough%20and%20biscuits%20for%20the%20freezer.%20Maybe%20a%20pie%20crust%20or%20two,%20as%20well.%20I%20also%20need%20to%20stew%20the%20aforementioned%20hen.%20She's%20too%20old%20to%20roast%20(her%20meat%20will%20be%20all%20chewy),%20but%20she'll%20be%20full%20of%20flavor%20and%20make%20an%20excellent%20stock%20when%20simmered%20for%20six%20hours%20or%20so%20with%20some%20veggie%20scraps.%20I%20like%20to%20reduce%20my%20chicken%20stock%20until%20it's%20thick%20and%20strong,%20then%20put%20it%20into%20ice%20cube%20trays%20and%20freeze%20it.%20I%20load%20the%20chicken%20stock%20ice%20cubes%20into%20a%20big%20freezer%20bag%20and%20throw%20one%20or%20two%20of%20them%20into%20almost%20anything%20-%20pasta%20water,%20risotto,%20gravy,%20whatever.%20It's%20a%20handy%20way%20to%20keep%20it.%3C/p%3E%3Cp%3ESo%20happy%20Labor%20Day%20to%20all%20who%20labor.%20I'm%20right%20there%20with%20you%20today!%3C/p%3E){kind=link}
