,%20making%20the%20fish%20more%20suitable%20for%20grilling.%3C/p%3E%3Cp%3E(Speaking%20of%20grilling,%20excuse%20the%20condition%20of%20the%20grill.%3C/p%3E%3Cp%3EWe%20recently%20got%20a%20new%20one%20since%20the%20one%20above%20was%20falling%20apart.)%3C/p%3E%3Cp%3EThe%20fish%20fillets%20were%20basted%20while%20grilling%20with%20a%20butter%20and%20herb%20mixture.%20%20I%20used%20basil,%20garlic%20chives,%20thyme,%20and%20oregano,%20but%20any%20mixture%20of%20herbs%20you%20have%20will%20work.%3C/p%3E%3Cp%3EThe%20redfish%20I've%20been%20cooking%20with%20lately%20were%20caught%20in%20the%20Lake%20Hermitage%20area.%3C/p%3E%3Cp%3EIn%20October,%20my%20dad%20took%20me%20to%20see%20the%20Lake%20Hermitage%20Marsh%20Creation%20project.%20%20I%20took%20many%20pictures%20of%20this%20dredge%20project.%3C/p%3E%3Cp%3EThis%20past%20spring,%20my%20uncle%20and%20I%20talked%20about%20coastal%20erosion%20and%20wetland%20loss%20at%20a%20family%20gathering%20(yeah,%20we're%20real%20party%20animals).%20%20We%20got%20to%20talking%20about%20diversions%20vs.%20dredging,*%20so%20he%20took%20me%20out%20to%20see%20the%20site%20of%20the%20dredge%20project%20again.%3C/p%3E%3Cp%3E*%20%20Dredging:%20sediment%20is%20dredged%20up%20from%20the%20Mississippi%20River,%20pumped%20through%20pipes,%20and%20deposited%20in%20areas%20to%20create%20marsh.%3C/p%3E%3Cp%3EDiversions:%20(also%20called%20sediment%20diversions)%20%20divert%20fresh%20water%20from%20the%20Mississippi%20River%20into%20marshland.%20%20The%20water%20carries%20sediment,%20which%20is%20deposited%20in%20the%20marsh.%20%20A%20picture%20of%20a%20diversion%20can%20be%20found%20here.%3C/p%3E%3Cp%3EI%20was%20amazed%20to%20see%20definite%20progress.%3C/p%3E%3Cp%3ELand%20being%20built..and%20staying%20put.%3C/p%3E%3Cp%3EThere%20was%20no%20mistake%20that%20more%20land%20exists%20now%20than%20before,%20created%20by%20river%20sediment%20being%20pumped%20in%20and%20delivered%20by%20these%20pipes.%3C/p%3E%3Cp%3EThis%20project%20seeks%20to%20create%20marsh%20that%20was%20lost%20due%20to%20the%20Deepwater%20Horizon%20Oil%20Spill%20in%202010.%3C/p%3E%3Cp%3EIt's%20very%20strange%20to%20see%20so%20much%20heavy%20equipment%20out%20in%20the%20marsh--where%20I've%20sunk%20up%20to%20my%20thighs%20many%20times.%20%20But%20it's%20working.%3C/p%3E%3Cp%3EHeat%20a%20grill%20to%20medium.%20%20Pat%20the%20fish%20fillets%20dry%20with%20paper%20towels.%3C/p%3E%3Cp%3EMelt%20the%20butter%20in%20a%20small%20saucepan.%20%20Add%20the%20herbs,%20lemon%20juice,%20pepper,%20and%20paprika%20and%20simmer%20for%20about%202%20minutes.%20%20Reserve%20about%202%20TBSP%20of%20the%20butter%20for%20serving.%3C/p%3E%3Cp%3EPlace%20the%20fish%20skin%20side%20down%20on%20the%20grill%20and%20baste%20with%20the%20butter%20mixture.%20%20Continue%20basting%20periodically%20while%20grilling%20until%20the%20fish%20flakes%20and%20is%20cooked%20through.%20%20My%20fillets%20took%20about%2012%20minutes%20and%20were%20about%201%22%20thick.%3C/p%3E%3Cp%3EDrizzle%20the%20fillets%20with%20the%20reserved%20butter%20and%20serve%20immediately.%3C/p%3E%3Cp%3EMore%20herbs...%3C/p%3E%3Cp%3EIn%20the%20past...%3C/p%3E%3Cp%3ELinking%20with:%3C/p%3E){kind=link}
