Ingredientes

  • 8 x lamb kidneys
  • 1 x onions, medium
  • 60 gm mushrooms
  • 60 ml Madeira
  • 3 slc bread, white
  • 50 ml vegetable oil parsley, minced
  • 150 ml gravy mix
  • 60 ml cream
  • 25 gm green peppercorns

Direcciones

  1. Cut kidneys into slices of about 2 cm. Quickly fry in the oil for about 3 min. Remove kidneys and set aside.
  2. Add in onion to the same oil and lightly fry, then pour off excess oil. Add in mushrooms and green peppercorns to the onions, add in the Madeira and simmer for a few min to allow it to reduce.
  3. Add in demi-glace and simmer gently for 5 min.
  4. Correct the seasoning, stir in the cream.
  5. Serve garnished with minced parsley, sauteed mushrooms and fried bread croutons.
  6. Brandy may be used in place of madiera.
