Ingredientes

  • 1 x 15-ounce. can black beans, liquid removed and rinsed
  • 4 x Roma tomatoes, minced
  • 1 x onion, minced
  • 1 x 15-ounce. can white corn, liquid removed
  • 1 x cucumber, peeled and sliced
  • 2 x jalapeno peppers, seeded and sliced
  • 1 c. Monterey Jack cheese, shredded
  • 1 c. tortilla chips, crumbled

Direcciones

  1. Dressing:1/3 c. olive oilJuice of 3 limes2 cloves garlic, minced1 teaspoon cumin1/3 c. fresh cilantro, chopped1 teaspoon chili powder2 teaspoon sugarSalt and pepper to taste
  2. Layer salad ingredients in a glass bowl. Combine dressing ingredients in a separate bowl and mix well. drizzle dressing over salad just before serving.
  3. Note: Slimmers -: Use light cheese and low fat chips.
