Ingredientes

  • 1 c. shredded iceberg lettuce
  • 1/4 c. minced green bell pepper
  • 1 1/4 c. Black Bean Relish
  • 1/2 c. whole kernel corn
  • 1 sm avocado peeled and sliced Lime Vinaigrette
  • 1/2 tsp grated lime peel
  • 2 Tbsp. lime juice
  • 1 Tbsp. snipped fresh cilantro
  • 1/4 tsp salt -- crushed
  • 1 sm clv garlic -- crushed
  • 1/2 c. extra virgin olive oil

Direcciones

  1. Layer lettuce, bell pepper, 3/4 c. Black Bean Relish and the corn in a medium bowl. Arrange remaining 1/2 c. relish and the avocado slices over the top. Serve with Lime Vinaigrette.
  2. For Vinaigrette: Place all ingredients except oil in blender. Cover and process till mixed. Gradually pour in oil, processing till thick.
