Two foods you’ll always find in my kitchen; frozen cheese tortellini in the freezer and cans of pizza sauce in the cupboard.

I keep the tortellini for those days when life is extra crazy. With it, I'm able to pull together a quick meal without having to hit the drive-through.

The pizza sauce is more for weekends. I love making pizza while having a cold brewski. I find the whole process very relaxing! Might have something to do with beer!

The recipe I have for you today combines both these ingredients in a baked pasta dish that smells like pizza while it cooks in the oven and has that familiar pizza-pie flavor when you bite in!

I should also mention...it's a cinch to make!

I love sweet fire roasted red peppers from a jar.

They offer a convenient way to add sweet flavor to pasta dishes.

Pizza sauce gives any pasta bake that authentic pizza smell and flavor.

For this dish a rubber spatula makes it easier to spread the sauce over the tortellini!

I have so many different ideas for this pasta bake. You could add ham and pineapple to make a Hawaiian version. Or...make a meat lover's version with meat filled tortellini, sausage and pepperoni. I like the Hawaiian version idea. I'll have to try that next!

Layered Tortellini Pizza Bake

Tortellini and peppers in a pizza flavored pasta bake.

Time it takes: 25 minutes

Makes: 4 servings

In a large pot, cook tortellini according to package directions.

Spread 2 spoonfuls of pizza sauce over the bottom of an 8x8 baking dish. Evenly spread half the cooked tortellini along the bottom of the dish. Spread half the pizza sauce on top of tortellini and evenly sprinkle on half the Parmesan cheese.

Top with half the chopped green bell pepper and half the roasted red peppers. Sprinkle half the cheese on top.

Repeat the process with the remaining pasta, pizza sauce, Parmesan cheese, peppers and cheese.

Bake in a 425 F oven for 10 minutes. Set to broil for the last 2 minutes to lightly brown the cheese on top.Remove soup from heat and let slightly cool before whisking in sour cream. Ladle soup into bowls and top each with equal amounts of cheese.
