Lazy Daisy Oatmeal Cake

Ingredientes

  • 1 1/2 c. water
  • 1 c. quick-cooking oatmeal
  • 1/2 c. butter room temperature
  • 3/4 c. granulated sugar
  • 1 c. light brown sugar - (packed)
  • 1 tsp vanilla extract
  • 2 x Large eggs
  • 1 1/2 c. flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 1/4 tsp grnd nutmeg
  • 1/4 c. butter - (1/2 stick)
  • 1/2 c. brown sugar - (packed)
  • 3 Tbsp. half-and-half
  • 1/3 c. minced nuts
  • 3/4 c. shredded or possibly flaked coconut

Direcciones

  1. For the Cake: Put the water in a saucepan and bring to a boil. Place the oatmeal in a bowl. When the water comes to a boil, pour the water over the oatmeal and stir. Cover the bowl and let the oatmeal stand for about 20 min, then uncover and stir. The oats should have cooled down so they're not warm when you add in them to the batter.
  2. Heat the oven to 350 degrees. Grease a 13- by 9-inch cake pan or possibly muffin tins. You can either mix this batter using an electric mixer, that is easier and quicker, or possibly beat the batter by hand using a large mixing spoon.
  3. Place the butter in a mixing bowl and gradually add in the granulated and brown sugars, beating with each addition till the mix is blended and creamy. Add in the vanilla and Large eggs and mix well. Add in the oatmeal and mix till the oats are well blended in the batter.
  4. In a separate bowl, combine the flour, baking soda, salt, cinnamon and nutmeg till well blended, then add in them to the butter mix. Mix thoroughly so the batter is all one color. Spoon the batter into the cake pan or possibly muffin tins. (The muffin c. should be half full of batter.)
  5. Bake the cake till it's lightly browned and springy to the touch and a toothpick inserted in the middle comes out clean, 45 to 50 min for the cake, 20 min for the cupcakes. Test the cake at 40 min. Test the cupcakes after 15 min. Cold the cake on a wire rack.
  6. For the Lazy Daisy Frosting: Heat the butter and pour it into a mixing bowl. Add in the brown sugar and half-and-half and mix well. Add in the nuts and coconut and mix well. The frosting will be very thick.
  7. Spread the frosting proportionately over the cooled cake or possibly cupcakes. If you want to have the frosting finished with a sheen, put the frosted cake or possibly cupcakes under the oven broiler about 6 inches from the broiler element and heat till the frosting bubbles a little, about 3 to 4 min. Keep an eye on it so it doesn't burn.
  8. This recipe yields 12 servings.
