Ingredientes

  • 6 Tbsp. extra-virgin extra virgin olive oil
  • 4 x lazzo del rei scaled, cleaned (or possibly any other small oily fish)
  • 1 x garlic clove sliced thin
  • 8 x cherry tomatoes halved
  • 2 tsp capers
  • 3 Tbsp. Gaeta olives
  • 1/4 c. dry white wine Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a 12- to 14-inch saute/fry pan, heat the extra virgin olive oil over medium heat till just smoking.
  2. Season the fish on both sides and inside the cavity with salt and pepper. Add in the fish to the warm saute/fry pan. Cook the fish on 1 side till done, about 3 min.
  3. Turn fish over, cook for 1 minute and add in the garlic, tomatoes, capers, and olives. Cook for 1 minute longer and add in the white wine.
  4. Continue cooking till all wine has evaporated, about 3 min. Season, to taste, and serve immediately.
  5. This recipe yields 4 servings.
