,%20while%20Belinda%20--the%20other%20Aussie--%20and%20I%20had%20both%20signed%20up%20for%20the%20full-day%20class.%20She%20and%20I%20would%20cook%20four%20Khmer%20dishes,%20including%20dessert.%20We%20all%20received%20Cambodia%20Cooking%20Class'%20Khmer%20Recipes,%20which%20featured%20the%20dishes%20we%20made%20in%20class.%20The%20recipes%20are%20taken%20from%20that%20cookbook.%3C/p%3E%3Cp%3EThe%20first%20dish%20we%20learned%20to%20make%20was%20Khmer%20fried%20vegetarian%20spring%20rolls%20with%20sweet%20and%20sour%20dipping%20sauce,%20known%20in%20Khmer%20as%20Chaio%20Yor.%3C/p%3E%3Cp%3EFor%2025%20spring%20rolls%3C/p%3E%3Cp%3ESpring%20Rolls%3C/p%3E%3Cp%3E1%20tbs%20peanuts(crushed)%3C/p%3E%3Cp%3EOne%20of%20the%20students%20shredded%20the%20tarot%20root%20while%20another%20did%20the%20same%20with%20the%20carrot.%20The%20tarot%20root%20was%20put%20in%20a%20large%20mixing%20bowl%20and%20salt%20was%20added.%20The%20salt,%20in%20conjunction%20with%20the%20kneading,%20helps%20to%20pull%20the%20starch%20from%20the%20tarot%20root.%3C/p%3E%3Cp%3EIt%20was%20amazing%20how%20the%20texture%20of%20the%20tarot%20changed%20after%20all%20the%20kneading.%3C/p%3E%3Cp%3EThen%20we%20mixed%20the%20tarot%20root,%20carrots%20and%20peanuts%20together.%20We%20seasoned%20the%20mixture%20with%20mixture%20with%20sugar,%20salt%20and%20pepper%20to%20taste.%3C/p%3E%3Cp%3ENext%20it%20was%20time%20to%20shape%20the%20mixture%20into%20mini%20sausages%20that%20would%20then%20be%20rolled%20in%20the%20rice%20paper.%3C/p%3E%3Cp%3EThe%20trickiest%20part%20came%20next,%20as%20we%20had%20to%20make%20sure%20we%20kept%20the%20edges%20of%20the%20rice%20paper%20even.%3C/p%3E%3Cp%3EOur%20chef%20instructor%20demonstrated%20first.%3C/p%3E%3Cp%3EAfter%20rolling%20the%20mixture%20in%20the%20rice%20paper,%20we%20sealed%20the%20spring%20rolls%20by%20dipping%20the%20outer%20edges%20in%20beaten%20egg.%3C/p%3E%3Cp%3EThis%20is%20how%20the%20spring%20rolls%20should%20look%20before%20they%20go%20into%20the%20oil.%3C/p%3E%3Cp%3EWhile%20the%20oil%20heated,%20we%20prepared%20the%20simple%20yet%20flavorful%20dipping%20sauce%20from%20staple%20ingredients.%3C/p%3E%3Cp%3EAfter%20crushing%20the%20garlic%20in%20a%20mortar%20(which%20we%20used%20throughout%20the%20class),%20we%20added%20all%20the%20other%20ingredients%20and%20mixed%20them.%3C/p%3E%3Cp%3EWe%20heated%20the%20oil%20and%20added%20the%20spring%20rolls.%3C/p%3E%3Cp%3EThe%20oil%20must%20be%20hot%20enough%20to%20make%20the%20spring%20rolls%20crisp%20on%20the%20outside,%20yet%20cooked%20on%20the%20inside.%20It%20took%20about%2010%20minutes%20or%20so.%3C/p%3E%3Cp%3EThe%20spring%20rolls%20looked%20lovely%20after%20they%20finished%20cooking!%3C/p%3E%3Cp%3EThe%20only%20thing%20left%20was%20to%20dip%20the%20spring%20roll%20into%20the%20sauce%20and%20eat.%20The%20spring%20rolls%20were%20crisp,%20with%20the%20dipping%20sauce%20providing%20just%20the%20right%20flavoring%20and%20heat.%20They%20were%20a%20lovely%20first%20course.%3C/p%3E){kind=link}
