Receta Leftover Turkey and Sausage Gumbo for #SundaySupper

My Sunday Supper pals have a great line line up so after you take a look at my Leftover Turkey and Sausage Gumbo, take a look at what everyone else has to offer.
Today, it is all about the leftovers!
- Leftover Turkey and Sausage Gumbo
- 1/2 cup Vegetable oil
- 1/2 cup all purpose flour
- 1 medium bell pepper (I used green)
- 3 stalks of celery
- 1 medium onion
- 3 garlic cloves
- 1 1/2 teaspoons thyme
- 1 bay leaf
- 3 tablespoons creole seasoning
- 4 cups leftover turkey meat
- 2 lbs Andouille or kielbasa type sausage
- 2 cups cooked white rice
Directions
Preheat your oven for 350 degrees.
Combine the oil and flour in a large dutch oven. Put the lid on and set it in the oven for 1 1/2 hours. Don't peek, don't open the lid, just leave it. At this point you should have a chocolate brown roux.
Meanwhile chop up your pepper, celery and onion. Add that to the pot. Mix it around until it starts to brown, about 5 minutes. Add your stock, garlic, thyme bay and creole seasonings. Bring back to a boil. Simmer for 30 minutes. Add the turkey and the sausage and simmer for another 30 minutes.
