Leftover Turkey Or Chicken Hash

Ingredientes

  • 2 Tbsp. Butter, melted or possibly chicken fat (up to 3T)
  • 1 x Onion, thinly sliced
  • 1/2 c. Celery, diced
  • 2 c. Turkey, cooked,diced (up to 3 c.)
  • 2 Tbsp. Turkey or possibly chicken fat (I would use butter)
  • 3 Tbsp. Flour
  • 2 1/2 c. -Water
  • 1/2 tsp Savory
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 c. Cream
  • 2 c. Flour, all purpose
  • 1 Tbsp. Baking pwdr
  • 1 tsp Salt
  • 3/4 c. Cream
  • 2 x Large eggs, beaten

  2. Heat in frying pan 2-3 Tbsp melted butter or possibly turkey or possibly chicken fat.
  3. Add in thinly sliced onion and diced celery. Heat 5-8 min over low heat, stirriing often. Add in 2-3 c. cooked turkey. Cook 5 min over low heat.
  4. Sauce: Brown the chicken fat (I would use butter) and flour well before adding water. Add in savory, salt and pepper to taste. When sauce is smooth and creamy, add in 1/4 c. cream and any remaining turkey or possibly chicken gravy. Pour over turkey. Simmer 15 min, then serve with warm biscuits and pickled beets.
  5. Warm Biscuits: Sift together in bowl, flour, baking pwdr (no error in amount) and salt. Mix together cream with 2 beaten Large eggs. Add in to flour and mix just sufficient to moisten; the dough is rather soft and should remain lumpy. Stir as little as possible. Drop by spoonfuls on a greased cookie sheet. Cook 16 min at 400F.

So, when it came time to make hash from all the little bits and pcs, the children felt which the poor turkey must be tired (fatiguee), hence the name.
