%3C/p%3E%3Cp%3EWhen%20I%20say%20leftovers%20aren't%20my%20thing,%20I'm%20talkin'%20about%20those%20fancy,%20repurposed%20leftovers.%3C/p%3E%3Cp%3EI'm%20not%20crafty.%20%20Crafty%20makes%20me%20curse%20and%20carry%20on.%3C/p%3E%3Cp%3ECome%20supper%20time,%20I'm%20usually%20dead%20tired%3C/p%3E%3Cp%3E(also%20makes%20me%20curse%20and%20carry%20on).%3C/p%3E%3Cp%3EOur%20leftovers%20are%20almost%20always%20a%20clone%20of%20a%20previous%20meal%3C/p%3E%3Cp%3E('cause%20I'm%20sciency%20like%20that).%3C/p%3E%3Cp%3EBut%20I%20started%20to%20accumulate%20bits%20and%20pieces%20of%20stuff%20in%20my%20freezer%20and%20fridge.%20%20Italian%20sausage%20because%20I%20only%20needed%20two%20links%20for%20a%20recipe%20(really...why%20only%20two?).%20%20A%20half%20box%20of%20puff%20pastry%20because%20another%20recipe%20required%20only%201%20sheet.%20%20(Can%20I%20tell%20you%20how%20much%20I%20looove%20puff%20pastry?%20%20A%20lot.%20%20Way%20lot.)%3C/p%3E%3Cp%3EMy%20dad%20gave%20me%20a%20vacuum%20sealed%20bag%20of%20collard%20greens%20from%20his%20garden.%20%20The%20bag%20was%20small%20and%20hung%20around%20the%20freezer%20because%20it%20required%20the%20collards%20to%20be%20part%20of%20something%20bigger%20than%20themselves.%3C/p%3E%3Cp%3ENailed%20it.%3C/p%3E%3Cp%3ESo%20I%20took%20all%20of%20this%20leftover%20stuff%20and%20did%20something%20I%20don't%20normally%20do...transformation.%3C/p%3E%3Cp%3ECue%20butterflies%20busting%20out%20of%20cocoons.%3C/p%3E%3Cp%3EI%20rarely%20post%20anything%20I%20make%20with%20leftovers%20since%20my%20leftovers%20are%20most%20likely%20not%20yours.%3C/p%3E%3Cp%3EBut%20we%20liked%20these%20Puff%20Pizzas%20w/%20Collard%20Greens%20so%20much%20that%20I%20purposefully%20made%20them%20again.%20%20(And%20again.)%3C/p%3E%3Cp%3EI%20reworked%20my%20scribbled%20notes%20into%20a%20recipe%20that%20uses%20full%20amounts%20of%20ingredients%20(meaning%20no--or%20very%20little--leftover%20bits%20and%20pieces%20required%20or%20remaining).%3C/p%3E%3Cp%3EThe%20%22pizza%22%20can%20be%20made%20with%20any%20kind%20of%20greens%20or%20fresh%20spinach,%20depending%20on%20what%20you%20have/like.%20%20It%20can%20be%20made%20with%20whatever%20sausage%20you%20have/like.%20%20Or,%20leave%20out%20the%20meat%20completely%20and%20increase%20the%20mushrooms%20and%20greens.%3C/p%3E%3Cp%3EThe%20topping%20is%20good,%20so%20make%20sure%20to%20press%20a%20big%20bed%20for%20it%20in%20your%20puff%20pastry.%20%20Don't%20want%20to%20miss%20out.%3C/p%3E%3Cp%3Eif%20appetizers%20are%20your%20thang...%3C/p%3E%3Cp%3E...do%20watcha%20wanna%20do.%3C/p%3E%3Cp%3EThaw%20puff%20pastry%20according%20to%20package%20directions.%3C/p%3E%3Cp%3EPreheat%20oven%20to%20375%20F.%3C/p%3E%3Cp%3EAdd%20olive%20oil%20to%20a%20large,%20deep%20skillet%20over%20high%20heat.%20%20Add%20the%20sliced%20mushrooms%20and%20sear%20so%20that%20the%20mushrooms%20are%20well%20browned%20and%20no%20longer%20give%20off%20much%20liquid.%20%20Season%20with%20thyme,%20salt,%20and%20pepper.%20%20Move%20the%20mushrooms%20to%20the%20sides%20of%20the%20pan%20and%20lower%20to%20medium.%20%20Add%20the%20sausage%20(removed%20from%20casing)%20and%20the%20bell%20pepper%20to%20the%20skillet.%20%20Brown%20until%20the%20sausage%20is%20cooked%20through.%20%20Season%20with%20garlic%20powder,%20onion%20powder,%20dried%20basil,%20dried%20oregano,%20and%20crushed%20red%20pepper.%3C/p%3E%3Cp%3EStir%20in%20the%20diced%20tomatoes%20and%20lower%20to%20a%20simmer.%20%20Simmer%20for%20about%2012-14%20minutes.%3C/p%3E%3Cp%3EWhile%20the%20topping%20simmers,%20bake%20the%20puff%20pastry%20at%20375%20F%20for%2012-14%20minutes.%20%20Remove%20from%20oven%20and%20press%20each%20slightly%20with%20a%20the%20back%20of%20a%20spoon%20to%20create%20a%20%22well%22%20for%20the%20topping.%20%20Set%20aside%20while%20you%20finish%20the%20topping.%3C/p%3E%3Cp%3EStir%20the%20greens%20or%20spinach%20into%20the%20sausage%20mixture.%20%20Cook%20for%20a%20few%20minutes%20until%20wilted.%20%20Top%20each%20square%20of%20puff%20pastry%20evenly%20with%20mixture.%20%20Optional:%20sprinkle%201/2%20Tbsp%20Parmesan%20cheese%20over%20each%20puff%20pizza.%3C/p%3E%3Cp%3EServes%208%3C/p%3E%3Cp%3ENote:%20I%20cook%20the%20entire%20amount%20of%20sausage%20mixture%20at%20one%20time,%20but%20save%20half%20of%20it%20for%20another%20night.%20%20I%20make%204%20squares%20of%20puff%20pastry%20one%20night%20(1%20sheet),%20and%20use%20the%20second%20sheet%20(4%20more%20squares)%20another%20night.%3C/p%3E%3Cp%3EMore%20Spinach...%3C/p%3E%3Cp%3EMother's%20Day%20Brunch...%3C/p%3E%3Cp%3ELinking%20with:%3C/p%3E){kind=link}
