Big six-inch cookies

Ingredientes

  • 1/2 cup (1 stick) unsalted butter, at room temperature
  • 1 cup sugar
  • 1 large egg
  • 1 tsp grated lemon zest
  • 1 3/4 cups flour
  • 1/8 tsp salt
  • 1 tsp baking powder
  • 3 tbsp fresh lemon juice
  • 1/4 cup sliced almonds

Direcciones

  1. In a large bowl, cream the butter and sugar until smooth
  2. Beat in the egg and lemon zest until the mixture is light and fluffy
  3. Mix the flour, salt, and baking powder in another bowl
  4. Add to the creamed mixture along with the lemon juice
  5. Mix until the dough is smooth
  6. Wrap in plastic wrap and chill for one hour
  7. Preheat the oven to 375 F
  8. Lightly grease a baking sheet or cover with parchment paper.
  9. On a lightly floured surface, roll the dough out to 1/4 inch thick
  10. Cut out circles using a 6-inch cookie cutter
  11. Place the cut-out cookies on the baking sheet about 2 inches apart
  12. Press the almonds lightly into the tops of the cookies
  13. Bake for 8 minutes or until golden
  14. Remove from the baking sheet and cool on a wire rack
