Receta Lemon And Coriander Pan Fried Trout

- Heat 3 Tbsp. of the extra virgin olive oil in a large frying pan, add in the trout and cook for approximately 5 min on each side. Remove from the pan and keep hot.
- Add in 1 Tbsp. of extra virgin olive oil to the pan and gently cook the shallot, add in the lemon zest, juice and coriander.
- Gradually add in the remaining extra virgin olive oil and heat gently.
- Remove the skin from the trout and serve with the lemon and coriander dressing over the top.
- NOTES : The lemon and coriander oil dressing blends beautifully with the delicacy of the trout.
