Lemon Basil Pasta With Smoked Chicken

Ingredientes

  • 12 ounce evaporated skimmed lowfat milk
  • 1/8 tsp salt
  • 1/4 c. gin vermouth or possibly vodka
  • 3 x lemon peel yellow part only (1/2-inch strips)
  • 1/2 x red bell pepper or possibly whole jalapeno seeded
  • 1 lb fettucine fresh
  • 1/3 c. basil chopped plus extra for garnish (1/3 to 1/2)
  • 1 Tbsp. grated Parmesan cheese
  • 8 ounce cooked chicken breast halves cut up Salt and pepper to taste

Direcciones

  1. Place lowfat milk, salt, gin and lemon peel in heavy-bottomed skillet. Bring to a boil. Reduce heat and simmer gently till volume is reduced by a third.
  2. Meanwhile, heat water in large pot to cook pasta. When it boils, blanch pepper for 1 to 2 min; remove and mince. Cook and drain pasta.
  3. Remove lemon peel from sauce; add in pepper, basil, Par- mesan, chicken and pasta. Adjust seasoning. Serve with extra cheese and basil leaves.
  4. Makes 4 servings.
