Lemon Blueberry Quick Bread

Ingredientes

  • 1/3 cup butter, melted
  • 1 cup sugar
  • 3 TBSP lemon juice
  • 2 eggs
  • 1-1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1 cup fresh or frozen blueberries
  • 2 TBSP grated lemon peel
  • GLAZE:
  • 2 TBSP lemon juice
  • 1/4 cup sugar

Direcciones

  1. Spray an 8x4 inch loaf pan with cooking spray.
  2. Cut a strip of parchment paper and lay it over the bottom of the pan.
  3. Spray parchment paper with cooking spray.
  4. In a large bowl, beat the butter, sugar, lemon juice and eggs. Combine the flour, baking powder and salt; stir into egg mixture alternately with milk, beating well after each addition.
  5. Fold in the blueberries and lemon peel.
  6. Transfer to the prepared loaf pan.
  7. Bake at 350° for 60-70 minutes or until a toothpick inserted near the center comes out clean.
  8. Cool for 10 minutes before removing from pan to a wire rack.
  9. Combine glaze ingredients.
  10. Drizzle over warm bread.
  11. Cool completely.
