Lemon Cashew Rice (Nibu Daar Pullao)

Ingredientes

  • 1 c. Basmati rice (uncooked)
  • 1 tsp Black mustard seeds
  • 2 Tbsp. Canola oil
  • 1/2 tsp Split urad dal
  • 1/2 c. Cashew pcs
  • 2 c. Water or possibly vegetable broth
  • 1/3 c. Fresh lemon juice
  • 1/4 tsp Sea salt
  • 1/4 c. Minced fresh cilantro

Direcciones

  1. Place rice in a strainer and rinse with cold water till water runs clear. Set aside.
  2. In a large saucepan, saute/fry mustard seeds in oil till they begin to pop.
  3. Add in urad dal and saute/fry till dal turns golden, about 2 min.
  4. Add in rice and cashews. Saute/fry for 2 min over medium heat.
  5. Stir in water, lemon juice and salt.
  6. Bring to a boil. Reduce heat, cover and simmer for 15 min. (Don't remove cover while cooking.) Remove from heat and let sit for 5 min.
  7. Fluff with a fork, garnish with cilantro and serve.
