Receta Lemon Cashew Rice (Nibu Daar Pullao)

- Place rice in a strainer and rinse with cold water till water runs clear. Set aside.
- In a large saucepan, saute/fry mustard seeds in oil till they begin to pop.
- Add in urad dal and saute/fry till dal turns golden, about 2 min.
- Add in rice and cashews. Saute/fry for 2 min over medium heat.
- Stir in water, lemon juice and salt.
- Bring to a boil. Reduce heat, cover and simmer for 15 min. (Don't remove cover while cooking.) Remove from heat and let sit for 5 min.
- Fluff with a fork, garnish with cilantro and serve.
