Receta Lemon Chia Seed Scones
I recently shared this recipe for Lemon Chia Seed Scones on Ducks n' a Row.
I found this wonderful recipe on the Dole website.
I have changed the recipe slightly, adding a few tablespoons of Greek lemon yogurt.
The scones turned out fantastic!
With a nice lemony flavor and a slight crunch from the chia seeds.
(Personally, I don't think chia seeds have any taste but they are super good for you)

I love all scones and these Lemon Chia Scones paired perfectly with a nice hot cuppa tea.

Lemon Chia Seed Scones
- 3 cups flour
- 1 cup plus 1 T sugar
- 1 T baking powder
- 2 t grated lemon peel
- 1 t salt
- 9 T unsalted butter, chilled and cut into small pieces
- 3 T chia seeds
- 2 T lemon juice
- 1/2 cup low-fat milk plus 2 T milk
- 2 T Greek lemon flavored yogurt
- Preheat oven to 400 degrees
- In a large bowl combine;
- Flour, 1 cup sugar, baking powder, lemon peel and salt
- Cut-in butter using a pastry blender until mixture resembles coarse crumbs
- Blend chia seeds, lemon juice, milk and lemon flavored yogurt
- Add to flour mixture
- Stir until dough comes together
- On a floured surface, knead dough together 10 times
- Flatten dough into an 8-inch circle
- Cut round into 12 wedges
- Transfer wedges to a baking sheet lined with parchment paper
- Mix together 2 T milk and 1 T sugar
- Brush tops of wedges with milk mixture
Bake 20 minutes or until golden brown
Transfer to a wire rack to cool
