Receta Lemon Chicken Soup
A comforting Lemon Chicken Soup with a hint of lemon flavor can brighten up any day.
Lemon Chicken Soup

Serves: 6
- 6 cups chicken broth
- 8 ounces of precooked pan-fried Lemon Chicken
- 1 teaspoon olive oil
- 4 carrots, thinly sliced
- juice of ½ lemon
- zest of one lemon
- 2 shallot, finely chopped
- 2 cloves garlic, minced
- salt and pepper to taste
- 6 thinly sliced lemons for garnish
- chopped chives
In a large stockpot, heat the olive oil over medium-high heat.
Sauté the shallots and garlic about 5 minutes.
Add the chicken broth, lemon zest,and lemon juice. Bring to a boil.
Add the carrots and cook, stirring occasionally, for 5 minutes.
Add the chicken and simmer for about 20 minutes.
Remove the pot from the heat. Stir in the chopped chives.
Season with salt and pepper to taste.
Ladle the soup into bowls and serve with a slice of lemon on top..

The hubby is not a huge soup eater. But luckily for him, I made extra pan-fried chicken. He ate that and everyone else enjoyed the soup.
