%3C/p%3E%3Cp%3E%22Lemon%20Chiffon%20Cake%20with%20Zesty%20Peach%20Icing%22%20stuck%20in%20my%20head.%20%20How%20wonderful%20does%20that%20sound!%20%20Accordingly,%20I%20hit%20the%20books%20to%20look%20for%20recipes%20for%20lemon%20chiffon%20cake%20and%20zesty%20peach%20icing.%3C/p%3E%3Cp%3EI%20selected%20the%20recipe%20for%20Lemon%20Chiffon%20Cake%20from%20Tartine%20by%20Elisabeth%20M%20Pruiett.%20%20I%20have%20had%20this%20book%20for%20years%20and%20have%20rarely%20used%20it,%20so%20it%20was%20great%20to%20be%20able%20to%20put%20it%20to%20good%20use.%20%20The%20zesty%20peach%20icing%20was%20harder,%20because%20I%20did%20not%20in%20fact%20find%20any%20recipes%20for%20it%20in%20my%20books%20or%20on%20the%20Net.%20%20Instead,%20I%20took%20inspiration%20from%20a%20recipe%20for%20Peach%20Buttercream%20by%20Cathlin%20Cooks,%20and%20combined%20it%20with%20my%20favourite%20buttercream%20recipe%20by%20the%20Primrose%20Bakery.%20%20I%20used%20peach%20puree%20in%20place%20of%20milk%20to%20make%20the%20buttercream,%20and%20tinted%20it%20a%20subtle%20shade%20of%20peach%20using%20red%20and%20yellow%20food%20colouring.%20%20For%20the%20zesty%20part,%20I%20added%20the%20zest%20of%20about%20half%20an%20orange%20to%20the%20buttercream.%20%20I%20halved%20the%20buttercream%20recipe%20because%20I%20didn't%20want%20stacks%20of%20icing%20left%20over,%20but%20on%20reflection,%20given%20the%20size%20of%20the%20cake,%20I%20should%20have%20used%20the%20whole%20recipe.%20%20This%20is%20why%20my%20icing%20is%20a%20bit%20scant.%3C/p%3E%3Cp%3EThe%20resulting%20cake%20is%20like%20an%20enormous%20sponge,%20which%20tastes%20only%20faintly%20lemony.%20%20For%20me,%20the%20highlight%20was%20the%20frosting,%20which%20lifted%20the%20flavour%20of%20the%20cake%20and%20had%20a%20distinct%20yet%20subtle%20peach%20flavour.%3C/p%3E%3Cp%3ETo%20make%20this%20cake,%20you%20will%20need:%3C/p%3E%3Cp%3ECake%3C/p%3E%3Cp%3ESift%20the%20flour%20and%20baking%20powder%20together%20into%20a%20large%20bowl.%20Mix%20in%201%201/4%20cups%20of%20sugar%20(reserving%20the%20other%201/4%20cup)%20and%20the%20salt.%20In%20a%20small%20bowl,%20whisk%20together%20the%20oil,%20egg%20yolks,%20water,%20lemon%20juice%20and%20lemon%20zest.%20Make%20a%20well%20in%20the%20centre%20of%20the%20flour%20mixture,%20pour%20in%20the%20oil%20mixture,%20then%20whisk%20the%20ingredients%20together%20until%20smooth.%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer%20fitted%20with%20the%20whisk%20attachment,%20whisk%20the%20egg%20whites%20together%20until%20soft%20peaks%20form.%20%20Add%20the%20cream%20of%20tartar%20and%20slowly%20add%20the%20reserved%201/4%20cup%20of%20sugar%20and%20continue%20to%20whisk%20the%20whites%20until%20stiff%20peaks%20form.%20Using%20a%20rubber%20spatula,%20fold%20a%20third%20of%20the%20egg%20whites%20into%20the%20cake%20batter%20to%20lighten%20it,%20then%20fold%20through%20the%20remaining%20egg%20whites.%3C/p%3E%3Cp%3EPour%20the%20batter%20into%20the%20prepared%20springform%20tin%20and%20bake%20for%2045%20to%2055%20minutes%20or%20until%20cooked%20through.%20(I%20needed%20an%20extra%20ten%20minutes%20-%20this%20cake%20is%20huge!)%3C/p%3E%3Cp%3ERemove%20the%20cake%20from%20the%20oven%20and%20place%20on%20a%20wire%20rack%20in%20the%20tin.%20Run%20a%20knife%20around%20the%20inside%20edge%20of%20the%20cake%20tin%20to%20loosen%20the%20cake%20from%20the%20sides,%20then%20leave%20the%20cake%20to%20cool%20in%20the%20tin.%20%20Don't%20skip%20the%20loosening%20step%20-%20I%20did,%20and%20my%20cake%20contracted%20from%20the%20sides%20of%20the%20tin%20as%20it%20cooled%20and%20became%20rather%20wrinkly%20in%20appearance.%20%20Apparently%20leaving%20the%20cake%20in%20the%20tin%20while%20it%20cools%20helps%20it%20to%20hold%20its%20shape.%3C/p%3E%3Cp%3ETo%20make%20the%20icing:%3C/p%3E%3Cp%3EIn%20the%20bowl%20of%20a%20stand%20mixer,%20beat%20the%20butter,%20peach%20puree%20and%20half%20the%20icing%20sugar%20together%20until%20smooth.%20Gradually%20add%20the%20remainder%20of%20the%20icing%20sugar%20and%20beat%20until%20the%20buttercream%20is%20smooth%20and%20creamy.%20Mix%20in%20the%20orange%20zest%20and%20food%20colouring.%3C/p%3E%3Cp%3EHalve%20the%20cake%20using%20a%20serrated%20knife%20(I%20did%20a%20terrible%20job%20because%20I%20was%20trying%20to%20rush%20it),%20and%20put%20about%20a%20third%20of%20the%20icing%20in%20the%20middle%20of%20the%20bottom%20half%20of%20the%20cake,%20and%20spread%20evenly%20over%20the%20surface.%20%20Place%20the%20other%20half%20of%20the%20cake%20on%20top,%20then%20spread%20the%20remaining%20icing%20over%20the%20top%20and%20sides%20of%20the%20cake.%3C/p%3E%3Cp%3ESlice,%20eat%20and%20enjoy!%3C/p%3E%3Cp%3EI%20am%20looking%20to%20see%20everyone%20else's%20Food%20'n'%20Flix%20creations%20inspired%20by%20Stranger%20than%20Fiction,%20which%20is%20a%20terrific%20film.%3C/p%3E){kind=link}
