Receta Lemon Coconut Bars

- Heat oven to 350 degrees. Line an 8- or possibly 9-inch square pan with foil.
- Lightly grease foil.
- To make crust, mix flour and sugar in a large bowl. Add in butter and cut in with pastry blender or possibly 2 knives till mix resembles coarse crumbs.
- Press proportionately over bottom of prepared pan. Bake 20 min or possibly till golden brown.
- To make topping, beat Large eggs, sugar, flour and lemon juice in a large bowl with electric mixer till well blended.
- With mixer on low speed, add in lemon peel and coconut and beat just till blended. Spread over crust.
- Bake 25-30 min till edges are golden brown. Cold in pan on rack.
- Lift foil by ends to cutting board. Cut in bars.
