,%20arguing%20about%20the%20$6%20admission,%20and%20no%20senior%20discount%20%E2%80%93%20%E2%80%9CI%20want%20a%20senior%20discount!%E2%80%9D%20%E2%80%9COkay.%20Today,%20seniors%20pay%20$12%20with%20a%2050%25%20discount.%20So,%20$6.%E2%80%9D%3C/p%3E%3Cp%3EAh,%20the%20couple%20when%20told%20there%20were%20only%20single%20seats%20left.%20He,%20%E2%80%9CWell,%20that%E2%80%99s%20okay.%20We%20want%20to%20see%20this%20movie.%20And%20who%20talks%20through%20the%20movies%20anyway?%E2%80%9D%20She,%20glances%20at%20him%20sideways,%20%E2%80%9CWell,%20I%E2%80%99ll%20be%20able%20to%20watch%20the%20movie%20in%20peace!%20You%20never%20STOP%20talking%20through%20the%20movies!%E2%80%9D%3C/p%3E%3Cp%3EThe%20time%20goes%20by%20REALLY%20quickly%20with%20this%20entertainment!%3C/p%3E%3Cp%3EWell,%20the%20entertainment%20and%20the%20GREAT%20gals%20I%20work%20with!%20Justine%20and%20Grace%20make%20getting%20through%205%20hours%20a%20pleasure!%20It%20doesn%E2%80%99t%20hurt%20that%20Justine%20makes%20the%20BEST%20nachos%20and%20snacks%20for%20us!%3C/p%3E%3Cp%3ESo,%20long%20way%20around%20to%20why%20I%20made%20these%20cupcakes%20%E2%80%A6%3C/p%3E%3Cp%3EJustine%20showed%20me%20the%20ropes%20when%20I%20started%20in%20the%20box%20office.%20She%20explained%20everything%20in%20an%20uncomplicated%20way,%20held%20my%20hand,%20made%20me%20laugh%20and%20fed%20me.%20When%20I%20found%20out%20she%20had%20a%20birthday%20coming%20up%20AND%20had%20to%20work%20on%20her%20birthday%20(!)%20I%20decided%20we%20needed%20to%20have%20a%20little%20celebration%20at%20work.%3C/p%3E%3Cp%3EWhat%20to%20make?%20What%20to%20make?%20Something%20with%20chocolate!%20Nope.%20She%20doesn%E2%80%99t%20like%20chocolate.%20Oh,%20stop%20gasping%20out%20there!%20Not%20liking%20chocolate%20is%20not%20a%20deal%20breaker%20in%20life!%3C/p%3E%3Cp%3EI%20started%20searching%20for%20something%20fun%20and%20festive,%20omitting%20chocolate.%20That%E2%80%99s%20when%20I%20stumbled%20up%20these%20great%20Lemon%20Cupcakes%20with%20Raspberry%20Frosting%20over%20at%20Sally%E2%80%99s%20Baking%20Addiction.%20I%20knew%20this%20was%20the%20recipe%20for%20me!%3C/p%3E%3Cp%3EThey%20were%20fabulous!%3C/p%3E%3Cp%3EPreheat%20the%20oven%20to%20350F.%20Line%2012-count%20muffin%20pan%20with%20paper%20liners.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20handheld%20or%20stand%20mixer%20fitted%20with%20a%20paddle%20attachment,%20beat%20the%20butter%20and%20sugar%20together%20on%20medium-high%20speed%20in%20a%20large%20bowl%20until%20creamed.%20About%202-3%20minutes.%20Scrape%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20needed.%20Add%20eggs%20and%20vanilla.%20Beat%20on%20medium-high%20speed%20until%20everything%20is%20combined,%20about%202%20full%20minutes.%20Scrape%20down%20the%20sides%20and%20bottom%20of%20the%20bowl%20as%20needed.%20Set%20aside.%3C/p%3E%3Cp%3EIn%20a%20medium%20bowl,%20toss%20together%20the%20flour,%20baking%20powder,%20and%20salt.%20Slowly%20add%20the%20dry%20ingredients%20to%20the%20wet%20ingredients%20in%203%20additions,%20beating%20on%20low%20speed%20after%20each%20addition.%20Batter%20will%20be%20thick.%20Beat%20in%20the%20milk,%20lemon%20zest,%20and%20lemon%20juice%20on%20low%20speed%20until%20just%20combined.%20Do%20not%20overmix%20this%20batter%20at%20any%20point.%20Spoon%20batter%20evenly%20into%2012%20cupcake%20liners.%20Bake%20for%20about%2020%20minutes.%20Check%20at%2018%20minutes,%20then%20again%20at%2020.%20A%20toothpick%20inserted%20in%20the%20middle%20will%20come%20out%20clean%20when%20done.%3C/p%3E%3Cp%3ERemove%20from%20the%20oven%20and%20allow%20to%20cool%20completely%20before%20frosting.%3C/p%3E%3Cp%3ETo%20make%20the%20frosting,%20beat%20softened%20butter%20on%20medium%20speed%20for%20about%203-4%20minutes%20until%20completely%20smooth%20and%20creamy.%20Add%20the%20confectioners%E2%80%99%20sugar,%20cream,%20vanilla%20extract,%20and%20salt%20with%20the%20mixer%20running.%20Increase%20to%20high%20speed%20and%20beat%20for%201%20minute.%20Add%20the%20raspberry%20preserves%20and%20beat%20until%20thick%20and%20creamy,%20about%202%20full%20minutes.%20Add%20more%20powdered%20sugar%20if%20frosting%20is%20too%20thin,%20is%20separating%20(due%20to%20the%20fruity%20jam)%20or%20looks%20too%20wet.%20And%20then%20add%20more%20salt%20to%20offset%20added%20sweetness.%3C/p%3E%3Cp%3EBefore%20frosting%20I%20filled%20a%20few%20of%20the%20cupcakes%20with%20some%20frosting%20before%20frosting.%20To%20fill%20the%20cupcakes:%20use%20a%20sharp%20knife,%20cut%20a%20circle/hole%20into%20the%20center%20of%20the%20cupcake%20to%20create%20a%20little%20pocket%20about%203/4%20inch%20deep.%20Place%20about%201%20teaspoon%20of%20raspberry%20frosting%20inside%20and%20top%20with%20the%20piece%20of%20cupcake%20you%20removed%20to%20seal.%20Then%20frost%20the%20entire%20cupcake.%3C/p%3E%3Cp%3EI%20couldn%E2%80%99t%20find%20my%20piping%20bag,%20so%20I%20put%20all%20the%20frosting%20in%20a%20zip-lock%20bag,%20cut%20a%20corner%20and%20frosted%20away!%3C/p%3E%3Cp%3EI%20toped%20each%20with%20a%20fresh%20r
