21/2 cups Fine sugar(to make Super fine sugar,put regular sugar into a food processor for 1 minute)

1 cup bottled lemon juice

3/4 cup butter cut-up & chilled

7 large egg yolks

4 large whole eggs

Using a double boiler & a mixing bowl on top,get the water to boiling on the bottom pan,making sure it doesn't boil over into the top mixing bowl.Combine all eggs whisking & add sugar a little at a time,whisking well.

Add the lemon juice,stir till combined & smooth.

On the double boiler,stir in the butter,cook till the temperature reaches 170 degrees,about 15 minutes.

When you get close to the correct temp. the curd will start to thicken.Remove from double broiler & set on counter~~stir about 5 minutes until it looks like pudding!
