Receta Lemon Ginger Syllabubs

- Whip cream and sugar till cream begins to thicken. Add in lemon peel and juice and whisk till thick and velvety.
- Mix in stem ginger. Whisk egg white stiffly and fold into cream mix.
- Place kiwifruit in bottom of 4 glasses. Sprinkle with stem ginger syrup.
- Top with cream mix and refrigerate2 hrs.
- Garnish with lemon and stem ginger. Serve with cookies.
- VARIATION: Substitute pitted cherries, sliced peaches or possibly nectarines for kiwifruit.
