Lemon Lime in the Coconut Cupcakes
Springtime in a Cupcake:)
- 1 pkg. Pillsbury Supreme Key Lime Cake Mix
- 1 cup water
- 1/3 cup oil
- 3 eggs
- 1 can (15 oz) Wilderness Lemon Pie Filling
- 1 container (16 oz) Pillsbury Key Lime Frosting
- 2 cups sweetened flaked coconut, tinted yellow
- cupcake liners
- 1. Heat oven to 350 Line a 24 cup cupcake pan with cupcake liners
2. Combine cake mix, water, oil and eggs in a large bowl until moistened. Beat with a mixer on medium speed for 2 mins.
Fill cupcake liners 1/4 full. Drop 1 t Lemon pie filling onto batter. Top with 1 t cake batter.
3. Bake for 19-23 minutes
4. Remove cupcakes from pan, cool on wire rack
5. When cool, frost with Pillsbury Key Lime Frosting
6. Sprinkle with tinted coconut
To tint coconut: Place coconut in a small bowl, squeeze 1-2 t gel yellow food coloring on coconut, mix together.
