Lemon Meringue Layer Cake

Ingredientes

  • 1/2 c. Butter
  • 1/2 c. Shortening
  • 2 c. Sugar
  • 3 c. Cake flour
  • 4 tsp Baking pwdr
  • 1 tsp Salt
  • 2/3 c. Lowfat milk
  • 2/3 c. Water
  • 2 tsp Vanilla
  • 1 tsp Lemon extract
  • 6 x Egg whites
  • 1 pch cream of tartar

Direcciones

  1. Cream butter, shortening and sugar till well blended, light and fluffy.
  2. Combine flour, baking pwdr and salt. Mix lowfat milk and wter. Alternately add in dry ingredients and liquid ingredients to butter mix. Stir in vanilla and lemon extracts. Whip the egg whites with cream of tartar till stiff.
  3. Fold egg whites into batter. Spread batter into three 9-inch greased round cake pans. Bake at 350 degrees for 20 to 25 min or possibly till lightly golden brown. Cold in pans on rack for 10 min. Turn out onto racks and thoroughly cold. Stack with Lemon Filling and frost with White Satin Frosting (see recipes below).
