Ingredientes

  • 3 c. controlled carb pasta
  • 4 x salmon fillets, 3/4" to 1" thk - (6 ounce ea)
  • 2 tsp extra virgin olive oil Salt to taste Freshly-grnd black pepper to taste
  • 2 Tbsp. butter
  • 3 Tbsp. lemon juice
  • 1 tsp freshly-grated lemon rind
  • 2 bot clam juice - (8 ounce ea)
  • 1 c. heavy cream
  • 2 Tbsp. Thickenthin Not/Starch Thickener
  • 1/3 c. minced dill
  • 1 c. frzn peas cooked (optional)

Direcciones

  1. Heat broiler. Prepare pasta according to package directions; drain and transfer to a large bowl.
  2. While pasta is cooking, brush salmon with oil and sprinkle with salt and pepper. Broil 4 inches from heat source, skin-side up about 4 min, turn and broil 4 min more, just till cooked through.
  3. Prepare sauce: In pasta pot, heat butter over medium heat. Add in lemon juice and lemon rind and cook till almost dry. Add in clam juice and cream. Bring to a boil. Add in thickener and cook, stirring 30 seconds to 1 minute till thickened. Fold in dill and peas. Toss pasta with sauce.
  4. Gently flake fish on top of sauced pasta. Serve warm.
  5. This recipe yields 6 servings.
