This Lemon Pepper Quinoa is savory, has a touch of sweetness, and just the right amount of citrus to please your palate.

2 cups water 1 cup dry quinoa 1 Tablespoon honey ¼ teaspoon sea salt ¼ teaspoon lemon pepper seasoning 1 teaspoon lemon juice 1 teaspoon lemon zest ⅛ cup sliced almonds

Bring 2 cups of water to a boil in a medium saucepan; add quinoa and return to a boil. Cover and reduce heat to a simmer. Cook for 20 minutes; remove from heat and fluff with a fork. Add all the ingredients and combine. Serve with slice of lemon 3.2.2310

I did it. I finally did it.

I bought a box of quinoa months ago. I was afraid of that box. I didn’t know how I was going to make a dish using quinoa. I have never cooked quinoa nor have I ever tasted it. Until today.

I was driving home from work, stuck in commuter traffic wondering what I was going to make for dinner.

Oh, I wing dinner almost every night. but tonight, I figured here is my chance to make something the hubby doesn’t like (he’s out-of-town) on a business trip.

That’s when I remembered I had that box of quinoa. Seriously, just a few ingredients and viola’ an instant incredible side dish was born.
