Lemon Poppy Seed Scones
Ingredients
- 2 1/2 c
- flour
- 1 c
- oatmeal
- 1/3 c
- sugar
- 1 T + 1 t
- baking powder
- 1/2 t
- baking soda
- 1/2 t
- salt
- 1/2 c
- butter, cold and cubed
- 2 t
- grated lemon zest
- 1
- egg, lightly beaten
- 1/2 t
- lemon extract
- 1/4 c
- lemon juice
- 1/2 c
- buttermilk
- 1 T
- poppy seeds
- 2 -2x2 inch square from a 3.17 oz
- pkg. Ghirardelli White Vanilla Dream Chocolate
- Cooking Directions
- Preheat oven 425 degrees
- Line baking sheet with parchment paper
- With potato peeler, shave white chocolate into pieces
- Set chocolate pieces aside; save 2T for garnish
In large bowl, combine flour,oats, sugar, baking powder, baking soda, salt.
Cut in butter with pastry blender until mixture resembles coarse crumbs
Add grated lemon zest
In small bowl, stir together egg, lemon extract, lemon juice, and buttermilk
Add milk mixture to flour mixture; stir together until dough forms a ball.
Stir in poppy seeds and white chocolate pieces
Turn dough onto floured surface; knead 5-10 times
Pat into a 10 inch circle
Cut into 10 wedges
Place wedges onto prepared baking sheet
Bake at 425 for 12-15 mins or until golden brown
Remove from baking sheet and transfer to cool on wire rack
Sprinkle saved white chocolate on warm scones
