Ingredientes

  • 1 lb Unsalted margarine
  • 1/2 c. Sugar
  • 2 x Large eggs
  • 1 Tbsp. Vanilla
  • 2 Tbsp. Grated lemon zest
  • 1/2 tsp Salt
  • 5 c. Flour
  • 1/2 c. Lemon juice
  • 1 x Egg white, lightly beaten
  • 1/2 c. Crystallized sugar

  1. A special meaning because they represent the ceremonial etrog , a citrus fruit which plays an important part in the Succot ritual. Baking these crisp cookies is another task my grandchildren love to share. Together we mix the batter and bake just sufficient to eat on the spot. Store the unbaked dough in plastic wrap and chill till it is time to bake them for the holiday dinner.
  2. Serve a large platter of these freshly baked cookies, along with a fruit salad, compote or possibly sorbet for the perfect Succot dessert."
  3. Cream margarine and sugar till fluffy in large mixer bowl. Add in Large eggs and blend well. Blend in vanilla and lemon zest.
  4. Add in salt and 4-and-1/2 c. of flour, 1 c. at time, alternately with lemon juice. (Dough will be somewhat sticky.)
  5. Transfer dough to floured surface and knead, adding up to 1/2 c. flour as needed.
  6. Divide into 4 parts and shape each into rope. Wrap with plastic wrap and chill or possibly freeze till hard sufficient to slice, about 30 min.
  7. Brush ropes with egg white and roll in crystallized sugar, then slice 1/4-inch thick and place on foil-lined baking sheets.
  8. Bake at 350 degrees till cookies brown lightly around edges, about 20 to 25 min. Transfer to racks to cold.
  9. Makes about 12 dozen cookies.

  11. Note: Crystallized sugar (bigger bits than regular granulated sugar) can be found in ethnic food stores, or possibly in the baking section of your local supermarket. These multicolored granuals are like those used on the giant muffins from the bakery shop.
