Lemon Sugar Cookies
Lemon sugar cookies are one of my
favorites. I absolutely love that hint of tart in a sweet cookie. I'm also a
pretty big fan of lemon filled sandwich cookies, if I do say so. These are
quick and easy to make in addition to being simple and delicious! These cookies
are chewy on the inside and a bit crisp on the edges, which is lovely I think.
Golden brown bottoms
I used powdered lemon zest in them but
you could also use fresh lemon zest and it would add a wonderful burst of lemon
flavor. These could easily be made into orange or lime sugar cookies which may
be fun for a summer cookout, even though that just passed. Sometimes you see
sugar cookies with frosting and these would be lovely with a thin layer of
frosting on them, but they are plenty sweet without it.
Lemon Sugar Cookies
Makes 3 dozen
Ingredients:
- - 1 cup butter, unsalted, softened
- - 1 ½ cups granulated sugar
- - 1 whole egg
- - ½ teaspoon vanilla extract
- - 2 tablespoons lemon juice
- - 1 tablespoon lemon zest, or ½ teaspoon powdered
- lemon zest
- - 2 ¾ cups all-purpose flour
- - 1 teaspoon baking soda
- - ½ teaspoon baking powder
- - ½ teaspoon salt
- - ½ cup granulated sugar, for rolling
Directions:
1. Preheat the oven to 350F. In the bowl of a mixer
blend together the butter and sugar on low speed until at least mostly blended
then for about 1 minute on medium speed until fluffy, scrape bowl.
2. Add the egg, vanilla extract, and lemon juice.
Blend on low speed until completely mixed, scrape bowl.
3. Add the lemon zest, flour, baking soda, baking
powder, and salt. Mix on low speed until completely blended.
4. Scoop about 1 ½ tablespoons at a time of dough,
roll into balls, then roll in granulated sugar. Place about 2” apart on a
baking sheet (12 to a standard cookie sheet). Bake for 10-12 minutes or until
lightly browned on the edges and just set in the middle. Cool on pan for 1-2
minutes then remove to a cooling rack to cool completely.
