Receta Lemon Yogurt Cake
The lemon sugar glaze adds a sweet citrus flavor to this Lemon Yogurt Cake.

- 1½ cups all purpose flour
- 2 tsp baking powder
- ½ tsp salt
- 1 cup plain yogurt, (I used Chobani)
- ¾ cup sugar
- 3 eggs
- zest from 1 lemon
- ½ teaspoon pure vanilla extract
- ½ teaspoon Lemon emulsion (optional)
- ½ cup vegetable oil
- ⅓ cup freshly squeezed lemon juice + ⅛ cup sugar
Preheat the oven to 350 F degrees.
Grease a cake pan with cooking spray.
In a medium bowl whisk the flour, baking powder, and salt. Set aside..
In a large bowl, whisk together the yogurt, 1 cup sugar, the eggs, lemon zest, and vanilla.
Slowly whisk the dry ingredients into the wet ingredients.
With a rubber spatula, fold the vegetable oil into the batter, making sure it’s all incorporated.
Pour the batter into the prepared pan and bake for about 50 minutes, or until a cake tester placed in the center of the cake comes out clean.
In a microwave add ⅓ cup lemon juice and the ⅛ cup sugar for about 20 seconds and stir the sugar until it dissolves. Set aside.
When the cake is done, allow it to cool in the pan for 10 minutes. Carefully place on a baking rack over a sheet pan. While the cake is still warm, pour the lemon-sugar mixture over the cake and allow it to soak in.
Let cool before serving. Sprinkle some powdered sugar over the top or serve with berries.(optional)

I think more than anything, I get great pleasure from baking. But it’s even more satisfying is when I bake for someone else and they love it.
It took this Lemon Yogurt cake to work to celebrate a co worker’s birthday. Everyone loved it. it was moist, delicious and the lemon glaze saturated the cake. Baking it in a pretty pan helps too.
