Lemon Zested Orzo Pilaf

Ingredientes

  • 1 lb orzo pasta
  • 1 Tbsp. extra-virgin extra virgin olive oil
  • 3/4 c. chicken stock
  • 3 Tbsp. prepared pesto
  • 2 x lemons zested, zest minced Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. Preheat oven to 400 degrees.
  2. Cook the pasta in boiling salted water, following the timetable on the package, approximately 8 to 10 min. Drain into a colander, and rinse with cool water. Drain completely.
  3. Grease the bottom of a casserole dish with the extra virgin olive oil. Combine all of the remaining ingredients in a bowl and place them in the greased dish.
  4. Cover with foil and bake at 400 degrees or possibly till thoroughly heated, about 20 to 30 min. Stir and serve.
  5. This recipe yields 10 servings.
