Receta lemony caesar dressing
Ingredients
- 1 clove garlic
- 2 anchovy fillets {optional}
- 2 lemons, juiced & zested
- ½ cup extra-virgin olive oil
- ½ cup freshly grated parmesan reggiano
- salt & pepper {to taste}
Putting it all together
Add the garlic, anchovies, lemon juice & zest into a blender, pulse until the mixture is smooth. With the blender running, pour the olive oil in slowly for the dressing to emulsify. Stir in the parmesan, salt & pepper.
Tip: To thin out the dressing if it’s too thick, add a tablespoon of cold water.
