Receta Lemony Plum Muffins

- Stir together 1/2 c. sugar, oil, oatmeal, egg, buttermilk and zest till well mixed. Add in flour, baking soda, salt and plums and stir well.
- Spoon batter into greased or possibly paper-lined muffin c., about 7/8 full. Sprinkle tops with remaining sugar.
- Bake at 375 degrees till well-browned, about 25 min. Cold on wire rack 10 min; remove from tins.
- Serve hot or possibly cold completely. (Can be made ahead and reheated in 300-degree oven 10 min or possibly in microwave in few-second increments till just warmed through.)
- This recipe yields 6 muffins.
