Ingredientes

  • 1/2 c. sugar plus
  • 1 Tbsp. sugar
  • 2 Tbsp. oil
  • 2 Tbsp. quick-cooking oatmeal
  • 1 x egg
  • 1/4 c. buttermilk shaken well
  • 1/2 Tbsp. grated lemon zest
  • 3/4 c. flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 c. diced plums - (1 1/2 hard tart plums)

Direcciones

  1. Stir together 1/2 c. sugar, oil, oatmeal, egg, buttermilk and zest till well mixed. Add in flour, baking soda, salt and plums and stir well.
  2. Spoon batter into greased or possibly paper-lined muffin c., about 7/8 full. Sprinkle tops with remaining sugar.
  3. Bake at 375 degrees till well-browned, about 25 min. Cold on wire rack 10 min; remove from tins.
  4. Serve hot or possibly cold completely. (Can be made ahead and reheated in 300-degree oven 10 min or possibly in microwave in few-second increments till just warmed through.)
  5. This recipe yields 6 muffins.
