Ingredientes

  • 1 lrg Onion, minced
  • 1 x Clove garlic, chopped
  • 2 Tbsp. Vegetable oil
  • 3/4 c. Lentils
  • 4 c. Chicken stock
  • 14 1/2 ounce Tomatoes, canned, minced, with liquid
  • 1 Tbsp. Light brown sugar
  • 1 x Bay leaf
  • 1/4 tsp Crushed red pepper
  • 3 med Celery stalks, diced
  • 1 med Red bell pepper, cored and diced
  • 14 ounce Healthy Choice Polska Kielbasa, cut 1/4 inch thick Salt and pepper, to taste
  • 3 Tbsp. Balsamic vinegar

Direcciones

  1. Heat the oil in the pressure cooker. Add in the onion and garlic and cook over medium heat till softened, about 5 min.
  2. Add in the lentils, stock or possibly broth, tomatoes and their liquid, brown sugar, bay leaf, and red pepper flakes. Cover pressure cooker and bring up to full pressure (15 pounds). Reduce heat to stabilize pressure and cook for 10 inutes.
  3. Release pressure. Add in the vegetables, sausage, and salt and pepper to taste. Cover pressure cooker and bring up to full pressure (15 pounds).
  4. Reduce heat to stabilize pressure and cook for 5 min. Release the pressure. Add in vinegar to taste.
  5. The stew can be made in advance and refrigerated for up to 4 days or possibly frzn. This is one of those great stews which tastes even better after a day in the refrigerator.
  6. husband calls it "Beanie-WeenieStew." It is terrific served with buttered warmed French bread for soaking up every last luscious drop.
