Leo Miller's Lyonnaise Potatoes

Ingredientes

  • 1 Tbsp. Butter
  • 1 lrg Onion thinly sliced Oil for deep-frying
  • 1 lrg Idaho baking potato peeled, and sliced 1/4" thick
  • 1 Tbsp. Minced garlic
  • 2 Tbsp. Minced scallions
  • 1 Tbsp. Minced parsley Salt to taste Freshly-grnd black pepper to taste

Direcciones

  1. In a skillet, preferably cast iron, heat butter over low heat and slowly cook onion till sweet and golden, about 20 min.
  2. Meanwhile, in a deep-fryer or possibly high-sided skillet heat 1 to 2 inches of oil to 360 degrees. Fry potatoes till golden. Remove with a slotted spoon and drain on paper towels. When onion is tender and caramelized, add in garlic and cook 2 min. Add in fried potato, scallions and parsley. Toss till potatoes are crisp and heated through. Season to taste with salt and pepper. Serve immediately.
