Rice Made Easy – Let There Be Carrots

Rice used to be just an accompaniment to dal (pulses) & vegetables, as plain rice or pulav a few years back. But not any more! I am amazed by the versatility and varieties of dishes this humble grain creates, after coming to the land of rice.

You name an ingredient and there is a recipe for the same, and each recipe tasting better than the other. Coriander rice, cabbage rice, lemon rice, pepper rice, tamarind rice, mint rice to name a few.

Phew….

Carrot rice dons many avatars, with pepper, onion, clove and green chillies into the recipe. And with every version tasting unique and different. My favorite is this quick and easy carrot rice with very few ingredients to go. This Carrot rice is a regular lunchbox for my son.

Ingredients;

(makes for 2 servings)

Method: Cook 2 cups of plain rice and spread it on a flat plate to cool it. Wash, scrub and grate 2 carrots. Heat oil in a wok and crackle the mustard seeds. Add the de husked black gram dal and fry it for a minute till it turns golden brown in color.

Add the grated carrots in the oil, and mix in all the dry spices. Mix it thoroughly and fry for about 2 minutes and take off the flames.

Mix in the cooked and cooled rice in this carrot mixture. Stir it well and pack a tasty and healthy lunchbox for kids or adults.

A quick and easy Carrot rice is ready in a jiffy.

Note:

Can make the recipe with the leftover rice also. Just re-heat the rice in microwave and mix in the cooked carrot mixture.

Quick to make it is a great lunchbox option for kids and adults as well. Serve it with homemade potato chips for a crunchy taste.

Makes a good picnic and travel food.

Mix Brown rice with white rice in the ratio of 1:1 and get healthy cooked plain rice.

Increase the quantity of carrots for better taste, more nutrients and excellent source of fibers in your diet.
