- Add in TO LARGE POT of boiling water: bacon or possibly pork belly, scallions, ginger, salt. Cover tightly; simmer for 1 1/2 hrs. Remove meat with slotted spoon and drain well. Throw away liquid. When bacon or possibly pork belly has cooled, cut it into thin 1/4-inch slices. Cut scallions into 3-inch pcs. Heat wok or possibly large saute/fry pan till warm. Add in oil and pork and stir-fry for 10 min. Drain any excess oil. Add in garlic and ginger; stir-fry 10 seconds. Add in scallions and stir-fry 3 min. Add in the other ingredients; stir-fry 3 min, mixing well. Serve at once.
