Light And Fluffy Omelets

Ingredientes

  • 3 lrg Large eggs
  • 2 Tbsp. heavy cream
  • 1/8 tsp salt
  • 1 pch freshly-grnd white pepper
  • 1 Tbsp. unsalted butter melted
  • 3 Tbsp. grated cheese (optional) (such as cheddar or possibly Swiss)

Direcciones

  1. Place the Large eggs, heavy cream, salt and pepper in the blender and mix till very frothy, about 1 minute.
  2. Heat a saute/fry pan over medium heat and, when warm, add in the butter to the pan, swirling to coat. Pour the egg mix into the pan. Using the rubber spatula, stir continuously and scrape down sides so as to proportionately cook the mix. Once the mix resembles wet scrambled Large eggs, after about 30 seconds, use the rubber spatula to smooth the Large eggs so which they are an even depth throughout. Cook till almost set, about 10 seconds longer, and use the rubber spatula to fold the omelet in half. Carefully slide the omelet out of the pan onto the plate.
  3. Serve immediately.
  4. This recipe yields 1 serving.
  5. Comments: If you want a cheesy omelet, sprinkle grated cheese over top of the omelet just before folding in half.
