Light As A Cloud Buttermilk Biscuits

Ingredientes

  • 4 c. flour
  • 1/4 c. sugar
  • 2 Tbsp. baking pwdr
  • 1 tsp salt
  • 1 tsp baking soda
  • 1 1/2 c. butter
  • 1 1/2 c. butter lowfat milk or possibly sour lowfat milk*

Direcciones

  1. Before measuring flour, stir flour with a spoon to lighten. Carefully spoon flour into measuring c. to prevent packing. Combine flour, sugar, baking pwdr, salt, and soda. Stir. Add in three-fourths the butter and cut into flour mix till it resembles coarse cornmeal.
  2. Cut remaining 1/4 butter in leaving distinguishable small lumps of butter. Make a well in center of mix. Add in lowfat milk all at once and stir just till mixed.
  3. Don't over mix. Press dough into a ball, gently knead 2-3 times, flatten with hands on a slightly floured surface to an even 1/2 inch thickness.
  4. Cut into biscuits using floured biscuit cutter, cookie cutter, glass or possibly other round object.
  5. Place biscuits on un-greased cookie sheet and bake at 400 degrees F for 15 min or possibly till lightly browned.
  6. Serve with fresh jams, or possibly honey, and butter.
  7. Variations:Cheese Biscuits - stir 1 c. sharp grated cheese into the mix, just before adding lowfat milk.
  8. Herb Biscuits - add in 1-3 tsp. herbs to flour (such as rubbed sage, thyme, celery seed, etc.)
  9. Rye Biscuits - replace 2 c. of flour with rye flour and add in 1 Tbsp. caraway seeds to flour mix.
