Light Lemon Ring Cake
Okay you guys/gals, I am going to remind right up front before I begin, I am no cake decorator. There, I said it. Or rather, I typed it. My photos below will prove that. But it’s not about the beauty of this cake, but the taste of it. Right?!. I bought a new ring pan and I had to try it pronto.
Late last night, I was baking this Light Lemon Ring Cake because I had to try out the pan. I had no business baking so late. but be proud of me, I only had one slice. Really. Only one.
Light Lemon Ring Cake

Serves: 16
Ingredients
- 1 cup sugar
- 4 Tablespoons butter, softened
- 1 whole egg plus 2 egg whites
- 1 Tablespoon lemon juice
- 1 teaspoon vanilla bean paste
- 2 cups flour
- ¾ cup 2% milk
- ¼ cup plain nonfat Greek yogurt
- 1 Tablespoon. lemon zest
- 2 tsp. baking powder
Directions
Preheat oven to 350 degrees
Spray a 10 inch ring cake pan with non-stick cooking spray. Set aside.
Place first five ingredients in a mixing bowl.
Start electric mixer at low-speed to blend; raise to high-speed for 4 minutes. Reduce speed to low and add remaining ingredients, mixing until thoroughly blended.
Pour batter into prepared pan. Bake for 45 to 50 minutes or until toothpick inserted in center of cake comes out clean.
Cool cake for 10 minutes; remove from pan.

Yes, I could have eaten more, but it was late after all and how would I burn off any more calories if I wasn’t going to be active.
It was best to leave it to the rest of the family to consume.
And that is what they did. Thank goodness.
